{"id":18597,"date":"2018-08-21T06:39:44","date_gmt":"2018-08-21T06:39:44","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=18597"},"modified":"2018-08-21T06:39:44","modified_gmt":"2018-08-21T06:39:44","slug":"crab-cakes-salsa-lebneh-pita","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=18597","title":{"rendered":"crab cakes, tomato\/beet salsa; herb\/spice-dressed labneh"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18602\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/08\/crab_cake_salsa_labneh.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I knew there would be crab cakes, but everything else was pretty much thrown together minutes before we sat down.<\/p>\n<p>It was a greenmarket day, and therefore a fish day at our place, but I didn&#8217;t really need anything other than seafood, and I remembered that I had some really terrific frozen crab cakes that were made at home by Delores Karlin, the wife of the fisherman, Phil, whose stand would be there that Monday. I resolved to try to buy more the next week.<\/p>\n<p>Early in the evening I decided that the <a href=\"https:\/\/www.epicurious.com\/expert-advice\/why-labneh-is-better-than-greek-yogurt-article\">labneh<\/a> that I had also picked up in Union Square on an earlier market day, would make a great base for a sympathetic savory accompaniment to the crab cakes I would be serving on a bed of tomato salsa [that is, a\u00a0<em>mostly<\/em> tomato salsa].<\/p>\n<p><a href=\"https:\/\/twitter.com\/wagnerblog\/status\/1031755070323548160\">I tweeted that evening<\/a> that the fact our &#8220;more or less middle eastern dinner&#8221; included crab narrowed down its cultural antecedents, since observant jews and at least most Shia Muslims avoid shellfish, or at least crab.\u00a0 But I think it&#8217;s safe to say,\u00a0at the very least, this dinner might not look too out of place on some Lebanese or Greek tables.<\/p>\n<p>Both labneh topping and the salsa &#8216;bottoming&#8217; each ended up with a few unorthodox ingredients.<\/p>\n<ul>\n<li>two crab cakes from\u00a0<a href=\"https:\/\/janniesusan.blogspot.com\/2015\/10\/an-abundant-life-catch-of-day.html\">PE &amp; DD Seafood<\/a>\u00a0(crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), defrosted earlier in the day, heated with a drizzle of olive oil inside a heavy oval enameled cast iron\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served on a\u00a0salsa\u00a0composed of one large chopped green heirloom tomato from Eckerton Hill Farm, some small raw chopped sweet <a href=\"http:\/\/food.hoggardwagner.org\/?s=Badger+Flame+beets\">Badger Flame beets<\/a> from Norwich Meadows Farm (they&#8217;re the bits that appear to be carrots in the picture), a little finely-chopped <a href=\"https:\/\/en.wikipedia.org\/wiki\/Aj%C3%AD_dulce\">aji dulce pepper<\/a>, olive oil, sea salt, freshly-ground\u00a0black pepper, crab cakes and salsa garnished with micro red amaranth<\/li>\n<li>a serving of plain water buffalo milk labneh from <a href=\"http:\/\/riverineranch.com\/index.html\">Riverine Ranch<\/a>, leaving a shallow depression to receive a bit of a very\u00a0good\u00a0Sicilian olive oil, from Agricento, <a href=\"http:\/\/www.mandranova.com\/en\/azienda-agricola\/olio-extra-vergine-doliva\/\">Azienda Agricola Mandranova<\/a> (made exclusively with Nocellara olives), a bit of\u00a0a dry seasoning called\u00a0<a href=\"https:\/\/www.nyshuk.com\/lekama\/\">L\u2019ekama<\/a>\u00a0from Ron &amp; Leetal Arazi\u2019s\u00a0<a href=\"https:\/\/www.nyshuk.com\/\">New York Shuk<\/a>, finely sliced segment of red scallion from Berried Treasures Farm, the chopped stem of a baby purple romaine lettuce stem from from Echo Creek Farm, found in the Saturday Chelsea Farmers Market, garnished with chopped lovage from Keith&#8217;s Farm and arranged with the last leaves from that same lettuce stem, which were dressed with Maldon salt, freshly-ground black pepper, drops of juice from a Whole Foods Market lemon, and a bit of the same Sicilian olive oil<\/li>\n<li><a href=\"http:\/\/www.damascusbakery.com\/pita\/#1498167314086-a598e4ba-71db\">Damascus Bakery flax and chia pita bread<\/a> from the Chelsea\u00a0<a href=\"https:\/\/foragersmarket.com\/market\/\">Foragers Market<\/a>, heated in the cast iron pan used for the crab cakes<\/li>\n<li>the wine was a Washington (Columbia Valley) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/dave-harvey-columbia-valley-sauvignon-blanc-2017?cid=US\">Dave Harvey Columbia Valley Sauvignon Blanc 2017<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/full_site\">Naked Wines<\/a><\/li>\n<li>the music was the album, <a href=\"https:\/\/www.amazon.com\/Alexander-Goehr-Symmetry-Disorders-Reach\/dp\/B005X1M3WO\/ref=as_li_ss_tl?ie=UTF8&amp;qid=1534826331&amp;sr=8-1&amp;keywords=alexander+goehr+symmetry&amp;linkCode=sl1&amp;tag=hoggardwagner-20&amp;linkId=abf340a7f9c58c3ae21d7575def8e3a9&amp;language=en_US\">&#8216;Alexander Goehr: Symmetry Disorders Reach&#8217;<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I knew there would be crab cakes, but everything else was pretty much thrown together minutes before we sat down.
