mackerel, tomato salsa; squash"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18443\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/08\/artichoke_3.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>There&#8217;s no real connection between the first and second courses of this meal, other than the fact that the first directly preceded the second, and the second directly succeeded the first.<\/p>\n<p>The appetizer was merely assembled.<\/p>\n<ul>\n<li>a container of grilled artichokes with mint leaves and oil, from Eataly, divided onto 2 plates, served with a modified mayonnaise which started with\u00a0<a href=\"https:\/\/sirkensingtons.com\/\">Sir Kensington\u2019s<\/a>, plain,\u00a0<a href=\"https:\/\/sirkensingtons.com\/assets\/offerings\/cl_Mayo-b1f39c780e31bf6fa5fed119b60e89eb.png\">Classic Mayonnaise<\/a>\u00a0(<a href=\"https:\/\/sirkensingtons.com\/story\">made by ex-Brown students, with headquarters in SoHo<\/a>), to which I added half that amount of <a href=\"https:\/\/sirkensingtons.com\/products\">Sir Kensington&#8217;s Dijon Mustard<\/a>, a bit of juice from a Whole Foods Market organic lemon, a pinch of turbinado sugar, a very small amount of finely-chopped Rocambole garlic from Keith&#8217;s Farm, a bit of chopped micro chervil from Two Guys from Woodbridge, and a pinch of Maldon salt, garnished with some more, still whole, micro chervil<\/li>\n<li>slices of a sesame baguette from Bread Alone Bakery<\/li>\n<\/ul>\n<p>The main course actually had to be cooked.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18444\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/08\/mackerel_summer_squash.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>two 9-ounce Spanish mackerel filets from Pura Vida Seafood, washed, dried, brushed with olive oil, seasoned with sea salt and freshly-ground black pepper, pan grilled on a seasoned cast iron double-burner grill pan over high heat for a total of about 6 or 7 minutes, first skin side down, then turned half way through, removed, arranged on the plates and dressed with a salsa that had been assembled just before, consisting of 7 ounces of a mix of (mostly) heirloom tomatoes from several local farms, chopped roughly or halved, tossed into a small bowl with a teaspoon or more of rinsed and drained Sicilian salted capers, half a tablespoon of juice from a Whole Foods Market organic lemon, a pinch of sea salt, and a bit of freshly-ground black pepper, the salsa garnished with some pungent basil buds from Windfall Farms<\/li>\n<li>two crookneck yellow summer squash from Windfall Farms, cut into 2-cm rounds, saut\u00e9ed in a little olive oil for a few minutes over a medium-high flame inside a large antique high-sided heavy copper pot, turning once, until both sides were well on their way to being caramelized, near the end of that time part of a length of a stem of fresh shallot from Tamarack Hollow Farm, cut into one-cm sections, was added and stirred into the squash sections until softened, the pan removed from the flame, seasoned with sea salt and freshly-ground black pepper, the vegetables placed inside a bowl where the they were tossed with a few pitted kalamata olives, one small finely-chopped red <i style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">aji dulce<\/i><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"> pepper from Eckerton Hill Farm, a little lemon juice, and chopped &#8216;blue licorice&#8217; (aka Korean mint, or Indian mint) from Lani&#8217;s Farm<\/span><\/li>\n<li>the wine was a New York (Long Island) ros\u00e9, <a href=\"https:\/\/store.wolffer.com\/product\/Estate-Ros--2016\">W\u00f6lffer Estate Ros\u00e9 2017<\/a><\/li>\n<li>the music was\u00a0<a href=\"https:\/\/www.amazon.com\/gp\/product\/B00FVZ9RX0\/ref=as_li_tl?ie=UTF8&amp;camp=1789&amp;creative=9325&amp;creativeASIN=B00FVZ9RX0&amp;linkCode=as2&amp;tag=hoggardwagner-20&amp;linkId=08ac3e51741cc61c41c3dcba51c05677\">Lully&#8217;s 1683\u00a0<em>trag\u00e9die en musique<\/em>, &#8216;Pha\u00e9ton&#8217;<\/a>,\u00a0Christophe Rousset conducting Les Talens Lyriques and the Ch\u0153ur de Chambre de Namur<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>There&#8217;s no real connection between the first and second courses of this meal, other than the fact that the first directly preceded the second, and the second directly succeeded the first.
