{"id":18188,"date":"2018-07-28T20:49:29","date_gmt":"2018-07-28T20:49:29","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=18188"},"modified":"2018-07-28T20:49:29","modified_gmt":"2018-07-28T20:49:29","slug":"inguazato-garlic-habanada-sauteed-fennel-micro-scallion","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=18188","title":{"rendered":"inguazato; garlic\/habanada-saut\u00e9ed fennel, micro scallion"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18195\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/07\/Inguazato_3.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>It&#8217;s not the best image I&#8217;ve captured of this terrific dish, <a href=\"http:\/\/food.hoggardwagner.org\/?s=inguazato\">which has appeared on this blog often<\/a>, but it was nearly midnight when I finally set the plate on the table, and we had been enjoying a certain amount of sparkling wine with some great friends over the previous few hours.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18201\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/07\/Gustarosso_can.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p>I wasn&#8217;t even going to bother publishing the meal this time, but the canned San Marzano tomatoes I used turned out to be the best I&#8217;ve ever come across, and I wanted to document them.<\/p>\n<ul>\n<li>two 8-ounce monkfish\u00a0tails\u00a0from Pura Vida Seafood, prepared\u00a0using\u00a0a\u00a0<a href=\"https:\/\/books.google.com\/books?id=XXPsU3lT8KoC&amp;pg=PA37&amp;lpg=PA37&amp;dq=inguazato+Pasternak&amp;source=bl&amp;ots=lrbi3H-sr3&amp;sig=WvEv0ly7MWs6ra3ALVQszwRgoMs&amp;hl=en&amp;sa=X&amp;ei=gJwKVMLXFqzisASLp4Ig#v=onepage&amp;q=inguazato%20Pasternak&amp;f=false\">David Pasternak recipe<\/a>, but\u00a0 reducing the proportions, using two thirds of a cup of Tunisian\u00a0<a href=\"http:\/\/www.nytimes.com\/2008\/10\/01\/dining\/01cous.html\">M\u2019hamsa Couscous<\/a>\u00a0and 2 tablspoons of Portuguese olive oil, both from Whole Foods in Chelsea, 2 sliced cloves of maturing Rocambole garlic from Keith&#8217;s Farm, one and a half\u00a0400-gram cans of fantastically-rich and-tasty Italian <a href=\"https:\/\/www.gustiamo.com\/dop-san-marzano-tomatoes-by-danicoop\/\">Gustarosso canned pomodoro San Marzano delle Agro Sarnese-Nocerino<\/a> from Eataly\u00a0Flatiron (by the way, for some dishes, there is nothing like very good canned tomatoes, at any time of the year), some cracked green olives, from the Chelsea Whole Foods Market, and\u00a02 small whole dried\u00a0<a href=\"http:\/\/dried%20peperoncino%20calabresi%20secchi%20from%20buon%20italia\/\">peperoncino Calabresi secchi<\/a>\u00a0from Buon Italia<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18202\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/07\/fennel_bulbs.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>two medium spring fennel bulbs from Alewife Farm, washed, the stems removed, trimmed of their fronds (the finest of which were set aside), cut into wedges, saut\u00e9ed for a few minutes in a little olive oil inside a very wide seasoned cast iron pan over medium high heat, adding, after the vegetable had begun to color, a little more of the &#8216;maturing garlic&#8217;, roughly-chopped, and a bit of dried golden\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">habanada pepper<\/a>, the heat lowered and the pan covered, cooked for another 10 minutes or so, the fronds, now chopped, tossed in and mixed with the fennel, arranged on the plates and garnished with micro scallion from Two Guys from Woodbridge<\/li>\n<li>the wine was an Italian (Marche) white,\u00a0<a href=\"https:\/\/flatiron-wines.com\/le-salse-verdicchio-di-matelica-2016\">Le Salse, Verdicchio di Matelica, 2016<\/a>, from <a href=\"https:\/\/flatiron-wines.com\/\">Flatiron Wines<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-18204\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/07\/Ann_Southam_500.jpg\" alt=\"\" width=\"500\" height=\"467\" \/><\/p>\n<ul>\n<li>the music was <a href=\"https:\/\/en.wikipedia.org\/wiki\/Ann_Southam\">Ann Southam<\/a>&#8216;s 1999 album, &#8216;<a href=\"https:\/\/www.youtube.com\/watch?v=1MG9HygVTWA&amp;feature=youtu.be\">Glass Houses<\/a>&#8216;<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s not the best image I&#8217;ve captured of this terrific dish, which has appeared on this blog often, but it was nearly midnight when I finally set the plate on the table, and we had been enjoying a certain amount of sparkling wine with some great friends over the previous few hours.
