{"id":17743,"date":"2018-06-26T22:09:30","date_gmt":"2018-06-26T22:09:30","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=17743"},"modified":"2018-06-26T22:09:30","modified_gmt":"2018-06-26T22:09:30","slug":"spaghettoni-with-spring-garlic-fennel-gold-cherry-tomato","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=17743","title":{"rendered":"spaghettoni with spring garlic, fennel, gold cherry tomato"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17753\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/spaghettoni_gold_tomatoes_fennel.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I&#8217;ve decided to post a description of this simple meal because it, and an infinite number of variations of it, works so well as a refreshing break from dinners, or a series of dinners, centered on protein.<\/p>\n<ul>\n<li>one small spring fennel bulb from Alewife Farm, the stems removed, cut lengthwise into\u00a0 wedges, each piece retaining a portion of the root end, saut\u00e9ed, along with the stems, trimmed of their fronds, in a little olive oil inside a large antique high-sided copper pan until softened and beginning to color, cut sections of a section of a stem of\u00a0spring garlic from Berried Treasures Farm added near the end, along with a crumbled piece of a dried golden\/orange habanada pepper (that one&#8217;s <a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">a little complicated<\/a>),\u00a0then 8 ounces of cooked and\u00a0drained Afeltra<em>\u00a0<\/em>spaghettoni,\u00a0from Eataly Flatiron, added and stirred over medium-high heat with some of the reserved pasta cooking water, and\u00a0more than a handful of lengthwise-halved golden pear-shaped tomatoes from Alex\u2019s Tomato Farm, that had been sourced at the\u00a0Saturday\u00a023rd St Greenmarket, added and stirred into the pasta, the mix seasoned with a little freshly-ground black pepper, a generous amount of the fennel fronds, rinsed and chopped, tossed in before the spaghettoni was arranged in 2 shallow bowls, drizzled around the edges with a little olive oil<\/li>\n<li>the wine was an Italian (Tuscany\/Maremma) white,\u00a0<a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"https:\/\/www.vivino.com\/wineries\/sassoregale\/wines\/sassoregale-maremma-toscana-vermentino-2017\">Sassoregale Maremma Toscana Vermentino 2017<\/a><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">, from <\/span><a style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\" href=\"http:\/\/philippeliquorsnyc.com\/\">Philippe Wines<\/a><\/li>\n<li>the music was Jordi Savall&#8217;s album, &#8216;<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1016346\">Orient-Occident Vol 2 &#8211;
