{"id":17523,"date":"2018-06-17T00:30:22","date_gmt":"2018-06-17T00:30:22","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=17523"},"modified":"2018-06-17T00:30:22","modified_gmt":"2018-06-17T00:30:22","slug":"salanova-lettuce-squid-ink-strozzapreti-scapes-tomatoes","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=17523","title":{"rendered":"salanova lettuce; squid ink strozzapreti, scapes, tomatoes"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17539\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/black_salad.jpg\" alt=\"black_salad.jpg\" width=\"600\" height=\"450\" \/><\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17540\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/squid_ink_pasta.jpg\" alt=\"squid_ink_pasta\" width=\"600\" height=\"450\" \/><\/p>\n<p>I only realized it was a \u00a0pretty <em>black<\/em> meal once I started looking at these pictures, now some 10 days after it was prepared (we had left for Los Angeles the day after).<\/p>\n<p>But it was also a <em>pretty<\/em> black meal, and that makes me smile, some 10 days after we enjoyed it.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17546\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/red_sal_lettuce.jpg\" alt=\"red_sal_lettuce.jpg\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>some gorgeous <a href=\"http:\/\/www.johnnyseeds.com\/vegetables\/lettuce\/salanova-lettuce\/salanova-red-butter-pelleted-lettuce-seed-3057JP.html\">salanova red butter lettuce<\/a> from Alewife Farm, dressed with a vinaigrette made by slowly whisking some Spanish (Seville) olive oil from Whole Foods Market in a small bowl with a mix of a very small amount of grated spring garlic from Berried Treasures Farm, a bit of good Dijon mustard, sea salt, freshly-ground black pepper, and a good Italian white wine vinegar,\u00a0<a href=\"http:\/\/www.maioligourmand-shop.com\/acetaia-c-giaccone-aceto-cesare-bianco.html\">Aceto Cesare Bianco<\/a>, \u00a0 (in a proportion of four parts oil to one part vinegar), sprinkled with some micro chervil from Two Guys from Woodbridge<\/li>\n<li>a demi-baguette from Whole Foods Market<\/li>\n<\/ul>\n<p>The pasta course, with its gentle sweetness, was a good foil for the acidity of the salad that preceded it. It was also just about as simple to prepare as the salad, a virtue much welcomed by the cook, since we would be flying to the West Coast the next morning.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17462\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/scapes.jpg\" alt=\"scapes\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>four garlic scapes from Norwich Meadows Farm\u00a0heated in a olive oil inside an antique, high-sided tin-lined copper pot until they had begun to soften, a bit of crushed dried\u00a0<em>pepperoncino Calabresi secchi\u00a0<\/em>from Buon Italia added, then some of &#8216;The Best Cherry Tomatoes&#8217; from Stokes Farm, halved, and the contents stirred a little before half a pound of squid ink pasta (8 ounces of <a href=\"https:\/\/severinopasta.com\/retail\/pasta\/\">Severino<\/a> squid ink <a href=\"https:\/\/en.wikipedia.org\/wiki\/Strozzapreti\">strozzapreti<\/a> from Whole Foods Market (a recent impulse purchase) that had just finished\u00a0cooking <em>al dente<\/em> was added, the mix stirred again, along with some reserved pasta cooking water, until the liquids had emulsified, arranged inside 2 shallow bowls, some olive oil poured around the edges, and finished with a garnish of micro mustard from Windfall Farms<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout was an Italian (Campania\/Ischia) white, <a href=\"http:\/\/www.garnetwine.com\/sku01496.html#anchor_moreinfo\"><span id=\"bmg_itemdetail_prod_title\" class=\"producttitle\">Casa d&#8217;Ambra Ischia Bianco<\/span>\u00a0<\/a><span id=\"bmg_itemdetail_vintage\" class=\"vintage\"><a href=\"http:\/\/www.garnetwine.com\/sku01496.html#anchor_moreinfo\">2016<\/a><\/span>, from <a href=\"http:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<li>the music throughout was the album, <a href=\"https:\/\/www.alia-vox.com\/en\/catalogue\/le-concert-spirituel-au-temps-de-louis-xv-1725-1774\/\">&#8216;Le Concert Spirituel au temps de Louis XV (1725-1774)&#8217;<\/a>, Jordi Savall conducting Le Concert des Nations<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; I only realized it was a \u00a0pretty black meal once I started looking at these pictures, now some 10 days after it was prepared (we had left for Los Angeles the day after).
