Actually, we&#8217;re <em>well into<\/em> the season but this was my first outing with these delightful promises of summer, the flower shoots of the garlic plant.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-17462\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/06\/scapes.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p class=\"p1\"><span class=\"s1\">I put together a pretty light pasta last night, to save both time and the wonderful flavors of these buds.\u00a0<\/span><\/p>\n<ul>\n<li><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">the second half of the one-pound package of the New York City pasta, Sfoglini&#8217;s Buffalo milk\u00a0<\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\"><em>spaccatelli <\/em>(the first half was used 2 weeks ago in <a href=\"http:\/\/food.hoggardwagner.org\/2018\/05\/17\/ny-pasta-spring-garlic-nj-red-mustard-ca-zest-it-chili-pinoli\/\">this meal<\/a>) that had just finished cooking until barely\u00a0<em>al dente<\/em>, <\/span><span style=\"font-family: -apple-system, BlinkMacSystemFont, 'Segoe UI', Roboto, Oxygen-Sans, Ubuntu, Cantarell, 'Helvetica Neue', sans-serif;\">served with a simple fresh sauce which began with at least 2 cups of\u00a0tender\u00a0garlic scapes from Norwich Meadows Farm, cut into 2-inch lengths, saut\u00e9ed in olive oil for 3 or 4 minutes, 2 tablespoons of butter and most of the juice of one organic lemon from Whole Foods added to the pan, the pasta added once\u00a0the butter had melted, along with the zest from that same\u00a0lemon, everything mix stirred over low heat, during which time some reserved cooking water was added to help emulsify\u00a0it, the mix seasoned with sea salt and freshly-ground black pepper, arranged in 2 low bowls, scattered with micro bronze fennel from Two Guys from Woodbridge, and with a bit of olive oil drizzled around the edge<\/span><\/li>\n<li>the wine was an Italian (Marche) ros\u00e9,\u00a0<a href=\"http:\/\/bowlerwine.com\/wine-or-spirit\/marche-rosato-igt\">De Angelis Marche Rosato IGT 2017<\/a>, from <a href=\"https:\/\/foragersmarket.com\/wine\/\">Foragers Wines<\/a><\/li>\n<li>the music was an <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=66996\">album of\u00a0Grazyna Bacewicz string quartets<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s scape season.
