{"id":1707,"date":"2013-03-26T13:02:42","date_gmt":"2013-03-26T17:02:42","guid":{"rendered":"http:\/\/food.hoggardwagner.com\/?p=1707"},"modified":"2013-03-26T13:02:42","modified_gmt":"2013-03-26T17:02:42","slug":"minutina-erba-stella-or-bucks-horn","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=1707","title":{"rendered":"Minutina, Erba Stella, or Bucks Horn"},"content":{"rendered":"<p><a href=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2013\/03\/minutina_Bodhitree.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1708\" title=\"minutina_Bodhitree\" src=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2013\/03\/minutina_Bodhitree.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/a><\/p>\n<p>&#8220;Minutina&#8221;, or &#8220;Erba Stella&#8221;, or &#8220;Bucks Horn&#8221;, take your pick.<\/p>\n<p>I snapped this picture with my phone at the <a href=\"http:\/\/bodhitreefarm.com\/\">Bodhitree Farm<\/a> stall at the Greenmarket last week, to remind myself to learn more about this very beautiful &#8220;herb&#8221;, and how it might best be used. \u00a0While I bought some equally gorgeous tatsoi that day, which I served as a side dish for Wienerschnitzel, I&#8217;m now anxious to snap up a bunch of Minutia, or <em>Erba Stella<\/em>, the very next chance I get. \u00a0Looking at this picture I totally understand the star reference in one of its names. \u00a0Oh, it&#8217;s also called\u00a0&#8220;Bucks Horn&#8221;, the name by which it was known here in the colonial period, for the slightly ragged or pointed edges of its leaves.<\/p>\n<p>I was delighted to learn that it&#8217;s also very much an Italian thing, a\u00a0cold weather salad green (and in fact a succulent) with a mild nutty flavour and slightly crunchy texture. \u00a0 Best when it&#8217;s young, it can be used in salads, where it contributes its own virtues in a crowd (not least its leaf shape and texture). \u00a0I&#8217;m actually likely to use it more often wilted with a bit of olive oil (with or without garlic) as a side or garnish for a meat or fish entr\u00e9e, or as a bed for fish, meat, cooked vegetables, or &#8211; perhaps an inspiration here &#8211; eggs.<\/p>\n<p>For the gardeners out there, it seems it&#8217;s incredibly <a href=\"http:\/\/www.motherearthnews.com\/Organic-Gardening\/2007-04-01\/Buckshorn-Plantain.aspx#axzz2OfGyQArh\">easy to grow<\/a>, that new growth follows after harvesting, and that it&#8217;s pretty hardy to boot.<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&#8220;Minutina&#8221;, or &#8220;Erba Stella&#8221;, or &#8220;Bucks Horn&#8221;, take your pick.
