Yup.<\/p>\n<p><a href=\"http:\/\/food.hoggardwagner.org\/?s=crab+cakes+\">Some form or another of this simple crab cake assemblage is a regular<\/a> on our table, and we never tire of it.<\/p>\n<ul>\n<li>two crab cakes from\u00a0<a href=\"https:\/\/janniesusan.blogspot.com\/2015\/10\/an-abundant-life-catch-of-day.html\">PE &amp; DD Seafood<\/a>\u00a0(crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), defrosted in the refrigerator earlier in the day, heated with a drizzle of olive oil inside a small heavy well-seasoned vintage cast iron\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served on a\u00a0salsa strewn over a bed of undressed\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Mizuna\">mizuna<\/a>\u00a0from Alewife Farm, the salsa composed of 7 large-ish chopped Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods Market, sea salt, freshly-ground\u00a0black pepper, 8 or so young ramps from Lucky Dog Organic Farm (the bulbs chopped, the greens sliced) that had first been wilted in olive oil inside a small pan, a quarter of a teaspoon of <a href=\"https:\/\/valgosa.com\/en\/brands\/safinter\/\">Safinter<\/a> Pimenton de la Vera smoked\u00a0<em>picante\u00a0<\/em>paprika, and some chopped fresh oregano leaves from Stokes Farm, a bit more chopped oregano placed on top of the cakes, all of it garnished with micro scallion from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16941\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/05\/mizuna_mustard.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>a mix of greens that included much more of the mizuna and some young red mustard, both from Alewife farm, washed in several changes of water, then wilted in a little olive oil in which 2 chopped spring garlic stems from John D. Madura Farm had been allowed to sweat, inside a large antique, high-sided copper pot, seasoned with sea salt and freshly-ground black pepper, finished on the plates with a drizzle of olive oil<\/li>\n<li>slices of\u00a0an organic multigrain baguette from Bread Alone<\/li>\n<li>the wine was a California (Lodi) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/products\/matt-iaconis-lodi-albarino-2017\">Matt Iaconis Lodi Albari\u00f1o 2017<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/products\/matt-iaconis-lodi-albarino-2017\">Naked Wines<\/a><\/li>\n<li>the music was\u00a0<a href=\"https:\/\/www.pentatonemusic.com\/aimard-messiaen-catalogue-d-oiseaux\">Pierre-Laurent Aimard playing Messiaen&#8217;s &#8216;Catalogue d&#8217;oiseaux&#8217;<\/a>, or at least most of it<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Sometimes these crab cake meals are virtually salads, but for me they&#8217;re actually easier (quicker at least) to put onto the table than the real thing, whether the salad is to serve as the whole meal, or only one of its elements.
