While we don&#8217;t usually play music when we&#8217;re dining with friends, on Sunday night we were alone, and we listened to <em>our song<\/em>\u00a0(or at least most of it), &#8216;<em>Tristan und Isolde<\/em>&#8216;, in a historical, and really great recording.\u00a0 The music came from speakers slightly below us, in the larger room, which has windows fronting on the street (a venue that can sometimes rival the volume &#8211; and interest &#8211; of what we may be playing).<\/p>\n<p>But last night, in my imagination, we were dining inside the private foyer of our own loge at the Vienna State Opera.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16759\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/Wiener_Staatsoper_box.png\" alt=\"\" width=\"500\" height=\"547\" \/><\/p>\n<p>That one is not ours. Although our foyer is larger, our opera house is much smaller than the <em>Wiener Staatsoper<\/em>. The windows were mostly closed that night, so the street precincts beyond, which can contribute a broader tonal collage of (found) sounds, were not a factor on this night.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16760\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/Tristan_dinner.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">*<\/span>four thick really, really good 6-ounce rib lamb chops purchased from Greg and Mike at the Sun Fed Beef\/ Maple Avenue Farms stand in the Union Square Greenmarket, brought to room temperature,\u00a0dried well, cooked\u00a0on a very hot enameled cast iron grill pan for around 12 minutes, turned over twice, seasoned with sea salt and freshly-ground black pepper after the first time, finished with a squeeze of juice from an organic lemon from Whole Foods Market, then scattered with the chopped bulbs and sliced leaves of an ounce and a half of young ramps from Lucky Dog Organic Farm, and drizzled with a little olive oil<\/li>\n<li>sunflower sprouts from Windfall Farms<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16773\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/turnips.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>purple-topped turnips from Norwich Meadows Farm, washed, scrubbed, peeled, cut into half-inch-thick slices, tossed with Whole Foods Market house Portuguese olive oil, sea salt, freshly-ground black pepper, plus a handful of rosemary leaves from Stokes Farm and 3 broken bay leaves from Westside Market, roasted in a large unglazed Pampered Chef ceramic pan for about 30 or 35 minutes\u00a0at 425\u00ba, or until tender and\u00a0beginning to carbonize (note: I don&#8217;t really have to turn them over when using this miracle oven pan, but I did this time, encouraging some crispy edges)<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16774\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/kale.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>green kale from Norwich Meadows Farm,\u00a0saut\u00e9ed, or wilted, in a tablespoon of olive oil in which 2 of Keith&#8217;s Farm Rocambole garlic cloves had first been allowed to sweat and begin to brown, seasoned with sea salt, freshly-ground black pepper, and a dash of more olive oil<\/li>\n<li><span style=\"color: #ff0000;\">*<\/span>the wine was a spectacular Italian (Umbria) red,\u00a0<a href=\"http:\/\/www.garnetwine.com\/sku06108.html\">Adanti Sagrantino di Montefalco 2006<\/a>, from <a href=\"http:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-16776\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/Tristan2-1024x877.jpg\" alt=\"\" width=\"960\" height=\"822\" \/><\/p>\n<p>There was also an opera ice.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16780\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/lemon_sorbetto_lemon_zest.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>a \u2018Lemon Zest\u2019 sorbet made by Vermont\u2019s\u00a0<a href=\"http:\/\/bluemoonsorbet.com\/\">Blue Moon Sorbet<\/a>, from Foragers Market, drizzled with\u00a0<a href=\"http:\/\/frankies457.com\/\">Frankies 457<\/a>\u00a0 Sicilian olive oil, the gift of\u00a0 a friend, a bit of Maldon salt, and some zest from an organic Whole Foods Market lemon, garnished with one of\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Anna%27s_Swedish_Thins\">Anna\u2019s Ginger Swedish Thins<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">*<\/span>the music throughout the meal was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=5460\">Richard Wagner&#8217;s 1857-1859\u00a0music drama in 3 acts, &#8216;Tristan und Isolde&#8217;,\u00a0Karl B\u00f6hm\u00a0conducting the\u00a0Bayreuth Festival Orchestra and the\u00a0Bayreuth Festival Chorus in a 1966 recording, with\u00a0 Wolfgang Windgassen, Christa Ludwig, Birgit Nilsson, Martti Talvela, Eberhard W\u00e4chter, Claude Heater, Erwin Wohlfahrt, Gerd Nienstedt, and Peter Schreier<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>[image from inside a red\/white\/gold box at the Vienna State Opera from <a href=\"https:\/\/www.tripadvisor.com\/ShowUserReviews-g190454-d194164-r458335058-State_Opera_House-Vienna.html#photos;geo=190454&amp;detail=194164&amp;ff=308107623&amp;albumViewMode=hero&amp;aggregationId=101&amp;albumid=101&amp;baseMediaId=308107623&amp;thumbnailMinWidth=50&amp;cnt=30&amp;offset=-1&amp;filter=7&amp;autoplay=\">Trip Advisor<\/a>;
