{"id":1649,"date":"2012-03-12T18:37:50","date_gmt":"2012-03-12T22:37:50","guid":{"rendered":"http:\/\/food.hoggardwagner.com\/?p=1649"},"modified":"2012-03-12T18:37:50","modified_gmt":"2012-03-12T22:37:50","slug":"kassler-rippchen-andin-sauerkraut","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=1649","title":{"rendered":"Kassler Rippchen and\/in sauerkraut"},"content":{"rendered":"<p><strong>dinner, 3\/9\/12<\/strong><\/p>\n<p><a href=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2012\/03\/Bintje_Potatoes_Mountain_Berry.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1650\" title=\"Bintje_Potatoes_Mountain_Berry\" src=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2012\/03\/Bintje_Potatoes_Mountain_Berry.jpg\" alt=\"\" width=\"600\" height=\"399\" \/><\/a><\/p>\n<p>My ancient copy of Mimi Sheraton&#8217;s <em><a href=\"http:\/\/www.amazon.com\/German-Cookbook-Complete-Mastering-Authentic\/dp\/0394401387\">The German Cookbook<\/a><\/em> comes to the table again: \u00a0I had brought home two beautiful smoked pork chops (Kassler Rippchen) from John of \u00a0Lancaster County&#8217;s\u00a0<a href=\"http:\/\/www.whatisfresh.com\/users\/millport-dairy\">Millport Dairy<\/a>\u00a0stall at the Union Square Greenmarket two days before, and the contents of our larder at home pointed me to how I should serve them. \u00a0I already had a bag of sauerkraut, some great potatoes, a medium onion and one green-<em>ish<\/em> apple (all but the cabbage picked up on earlier trips to the Greenmarket), so the solution seemed obvious. \u00a0It would be\u00a0Kassler Rippchen and sauerkraut. \u00a0The only question would be what wine to accompany it, and the Austrian light-to-medium red we had on hand was an excellent, if perhaps unusual choice.<\/p>\n<ul>\n<li><a href=\"http:\/\/en.wikipedia.org\/wiki\/Kassler\">Kassler<\/a> <a href=\"http:\/\/de.wikipedia.org\/wiki\/Kassler\">Rippchen<\/a>, in this case meaning two excellent smoked pork chops from\u00a0Lancaster County&#8217;s\u00a0<a href=\"http:\/\/www.whatisfresh.com\/users\/millport-dairy\">Millport Dairy<\/a>, seared very quickly over a very hot flame, then placed in a 375\u00ba oven, near the end of the 45-minute cooking time for its other contents\u00a0(the pork, smoked and ripened in a salt brine, does not have to be &#8216;cooked&#8217;
