Although\u00a0we don&#8217;t observe\u00a0the religious parts of any\u00a0religious holidays, we usually enjoy the celebrations, and especially the feasting.<\/p>\n<p>Last night, more or less unwittingly, we almost honored the Catholic tradition of a restrained &#8216;Paschal feast&#8217;: The\u00a0main course was vegetarian,\u00a0but the antipasto definitely was not.<\/p>\n<ul>\n<li>three ounces of fresh <a href=\"http:\/\/www.salumeriabiellese.com\/cured_pork.html#Finocchiona\">Salumeria Biellese<em>\u00a0finocchiona <\/em><\/a>salame\u00a0from Eataly, drizzled with some\u00a0 <a href=\"http:\/\/frankies457.com\/\">Frankies 457<\/a>\u00a0Sicilian olive oil, the gift of\u00a0 a friend<\/li>\n<li>some wonderful &#8216;wild arugula&#8217; from Lani&#8217;s Farm, dressed with more of the olive oil, Maldon salt, and freshly-ground black pepper<\/li>\n<li>slices of French sourdough levain from Bread Alone<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-16400\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/04\/mushroom_ravioli_alliums.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one 10-ounce package of Rana portobello-mushroom-and-ricotta-filled ravioli rounds from Eataly, boiled inside a large pot of well-salted water for 2 minutes and drained, slipped into a large vintage tin-lined copper pan in which two\u00a0sliced Rocambole garlic cloves from Keith\u2019s farm, a sliced section of green garlic from John D. Madura Farm,<span class=\"Apple-converted-space\">\u00a0<\/span>one small sliced red shallot from Norwich Meadows Farm, some crushed dried orange\/gold habanada, and a handful of pitted Kalamata olives from Whole Foods Market, otherwise left whole, had been briefly saut\u00e9ed in olive oil, then a bit of reserved pasta water added and the liquids emulsified, the mix placed in shallow bowls,\u00a0finished with a drizzle of olive oil, a sprinkling of toasted pine nuts, and garnished with micro scallions\u00a0from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout the meal was an Italian (Umbria) red,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/falesco\/wines\/vitiano-cabernet-sauvignon-sangiovese-merlot-2014\">Falesco Vitiano Rosso 2014<\/a>, from <a href=\"http:\/\/www.wineon23.com\/\">Landmark Wines<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=922296\">Carl Heinrich Graun&#8217;s\u00a0&#8216;Osteroratorium&#8217;<\/a> (Easter Oratorio) (composed late 1720s-early 1730s), performed by\u00a0Michael Alexander Willens\u00a0conducting the Cologne Academy<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was the Saturday before the feast of Easter, the middle of the Easter Triduum.
