When I got to the Greenmarket, the second vegetable almost jumped into my arms: local rainbow chard, remarkably available here in the first days of February!<\/p>\n<p>It was all good, very good.<\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">*<\/span>one fresh, unfrozen 13-ounce\u00a0duck breast from Hudson River Duck Farm,\u00a0the\u00a0fatty side scored in tight cross hatching with\u00a0a very sharp knife, the entire breast then sprinkled top and bottom with a mixture of sea salt, freshly-ground black pepper,\u00a0and a little turbinado sugar, left standing for about\u00a045 minutes before it was pan-fried,\u00a0the fatty side down first, inside a dry small oval enameled cast iron pan over medium heat for a total of 8 or 9 minutes, turning once, draining the oil\u00a0after the first few minutes [to be strained and used in cooking later, if desired], removed when medium rare\u00a0(cut into 2\u00a0portions to check that the center\u00a0was of the right doneness, which means\u00a0no more than medium rare), left to sit for several minutes before finishing it with a drizzle of juice from an organic lemon from Whole Foods Market, some chopped rosemary from Stokes Farm and a drizzle of olive oil<\/li>\n<li><span style=\"color: #ff0000;\">*<\/span>Japanese sweet potatoes, less than one pound, from\u00a0Samascott Orchards, unpeeled, but scrubbed thoroughly, halved and sliced\u00a0into one quarter to one half-inch crescents, tossed in a bowl with olive oil, sea salt, freshly-ground black pepper, 4 large unpeeled Rocambole garlic cloves from Keith\u2019s\u00a0 Farm, at least a tablespoon of small dried sage leaves from\u00a0Philipps Farm;\u00a0and a bit of crushed dark dried habanada pepper, originally fresh from Norwich Meadows Farm, spread onto a large well-seasoned\u00a0<a href=\"http:\/\/www.pamperedchef.com\/shop\/Stoneware\/Stoneware+Large+Bar+Pan\/1445\">Pampered Chef<\/a>\u00a0unglazed ceramic oven pan, roasted\u00a0at 400\u00ba for about 30 minutes, garnished with purple micro radish from Two Guys from Woodbridge<\/li>\n<li>one bunch of beautiful rainbow chard\u00a0from Eckerton Hill Farm, purchased from their stall in the Union Square Greenmarket,\u00a0wilted in a little olive oil in which 2 halved Rocambole garlic cloves from\u00a0Keith&#8217;s Farm had first been heated and slightly softened, seasoned with sea salt and freshly-ground black pepper, and finished with a drizzle of olive oil<\/li>\n<li>the wine was a Washington (Columbia Valley) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/products\/michaud-merlot-columbia-valley-2015\">Michaud Merlot Columbia Valley 2015<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/full_site\">Naked Wines<\/a><\/li>\n<li><span style=\"color: #ff0000;\">*<\/span>the music was\u00a0<a href=\"https:\/\/www.amazon.com\/Mathias-Spahlinger-Extension-1979-80\/dp\/B013B9VNA2\">Mathias Spahlinger&#8217;s 1979\/1980\u00a0work\u00a0for violin and piano,\u00a0&#8216;Extension&#8217;<\/a>, performed by\u00a0Hildegard Kleeb and Dimitris Polisoidis<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The idea of roasted Japanese sweet potatoes came first, shown here on the oven pan shortly before they had finished cooking, and then it only made sense that at the center of the meal there would be duck breast, if only because I had recently bought one, and had not yet moved it into the &hellip;<\/p>\n","protected":false},"author":1,"featured_media":0,"comment_status":"closed","ping_status":"closed","sticky":false,"template":"","format":"standard","meta":{"footnotes":""},"categories":[2],"tags":[],"class_list":["post-15692","post","type-post","status-publish","format-standard","hentry","category-meals-at-home"],"_links":{"self":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/15692","targetHints":{"allow":["GET"]}}],"collection":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts"}],"about":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/types\/post"}],"author":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/users\/1"}],"replies":[{"embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcomments&post=15692"}],"version-history":[{"count":0,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=\/wp\/v2\/posts\/15692\/revisions"}],"wp:attachment":[{"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fmedia&parent=15692"}],"wp:term":[{"taxonomy":"category","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Fcategories&post=15692"},{"taxonomy":"post_tag","embeddable":true,"href":"https:\/\/food.hoggardwagner.org\/index.php?rest_route=%2Fwp%2Fv2%2Ftags&post=15692"}],"curies":[{"name":"wp","href":"https:\/\/api.w.org\/{rel}","templated":true}]}}
