{"id":15370,"date":"2018-01-17T06:16:47","date_gmt":"2018-01-17T06:16:47","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=15370"},"modified":"2018-01-17T06:16:47","modified_gmt":"2018-01-17T06:16:47","slug":"kassler-sauerkraut-saltzkartoffeln-roggen-brotkrumen","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=15370","title":{"rendered":"Kassler, Sauerkraut; Saltzkartoffeln, Roggen Brotkrumen"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-15371\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/01\/smoked_pork_sauerkraut_potatoes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Last night, just after we had finished eating, and before writing this post, I followed up on <a href=\"https:\/\/twitter.com\/wagnerblog\/status\/953458350871777281\">a tweet and reply<\/a>\u00a0I had published earlier in the evening that had indicated, with no embellishments, what one of the major parts of this meal would be (I even included an image of the sauerkraut while it was cooking). That second tweet read,<\/p>\n<p><em>not saying it just because there\u2019s been a certain buildup to this meal, and some of us know not every meal coming out of this kitchen is even very good, but tonight\u2019s (sauerkraut, smoked pork chops, Saltzkartoffeln with toasted rye bread crumbs, was sublime<\/em><\/p>\n<p>The dinner\u00a0really was very, very good, although I can&#8217;t\u00a0explain why. In fact, just before I had begun to put it together I had thought about aborting it and coming back to\u00a0it on another day: I had learned I didn&#8217;t have a couple of the ingredients for the particular sauerkraut I had hoped to serve with the <em>Rauchbier<\/em> I planned to serve with the meal. Instead I shifted gears and\u00a0turned to another recipe, but keeping the <em>Rauchbier<\/em>.<\/p>\n<p>I would say that nothing was really new in any of the 3\u00a0parts of the entr\u00e9e, either the ingredients or the techniques used, except for caraway bread crumbs\u00a0as the topping for the potatoes. I did accidentally reverse the order of the covered\/uncovered sequence in the early\u00a0cooking\u00a0of the sauerkraut, but I had expected starting off uncovered would have had a negative effect on the texture, if not the flavor; it might actually have been a boon.<\/p>\n<p>In any event, this meal made me very happy, also because I brought it in under our new mutually-agreed\u00a0dinner deadline, making us both very happy.<\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">*<\/span> one 16-ounce\u00a0glass jar of sauerkraut (simply cabbage, water,\u00a0sea salt) from <a href=\"https:\/\/schallerweber.com\/\">Schaller &amp; Weber<\/a>\u00a0[also <a href=\"http:\/\/nymag.com\/listings\/stores\/schaller-and-weber\/\">here<\/a>] drained and very well-rinsed in several changes of cold water, drained again and placed inside a large, heavy, high-sided tin-lined copper\u00a0pot with 2 medium sweet yellow onions and one red onion (the red one to be a little perverse), both from Norwich Meadows Farm,\u00a0 one\u00a0&#8216;Newtown Pippin&#8217; apple from Samascott Orchards,\u00a08 or 9 whole juniper\u00a0berries and about the same number of\u00a0Whole Foods Market proprietary brand peppercorns, a little sea salt, 1\u00a0large Sicilian bay leaf from Buon Italia,\u00a0enough fresh water to almost cover the sauerkraut, with more added later on as needed, all brought to\u00a0a boil then merely simmered (uncovered at first, this time) over a low flame, stirring occasionally, for less than half an hour, and then covered (again, this time) for 20 or 30 minutes more, after which two 9-ounce smoked pork chops (in Germany\u00a0usually called Kassler) from Schaller &amp; Weber, that had first been dried and\u00a0briefly seared on both sides inside a dry cast iron pan, were buried\u00a0in the sauerkraut and heated for about 15 or 20\u00a0minutes, the chops and sauerkraut arranged on 2 plates<\/li>\n<li><span style=\"color: #ff0000;\">*\u00a0<\/span>somewhat over a pound (we could have survived with less, but they were absolutely delicious) of medium-size Nicola potatoes from\u00a0Tamarack Hollow Farm,\u00a0scrubbed, boiled whole and unpeeled in heavily-salted water until barely cooked through, drained, halved, dried in the\u00a0still-warm vintage Corning\u00a0<a href=\"http:\/\/www.ndga.net\/articles\/gmflameware.php\">Pyrex Flameware<\/a>\u00a0blue-glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>\u00a0in which they had cooked,\u00a0a couple tablespoons of\u00a0rich\u00a0<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u00a0[with\u00a012 grams of fat per 14 grams, for each\u00a0tablespoon of butter; American butter almost always has only\u00a0<em>11\u00a0<\/em>grams, which makes a surprising\u00a0difference in both taste and texture], seasoned with sea salt and freshly-ground black pepper, after which the\u00a0potatoes\u00a0were arranged on the plates next to\u00a0the chops and the sauerkraut and sprinkled with homemade breadcrumbs made from the heel of a loaf of Orwasher&#8217;s &#8216;Righteous Corn Rye&#8217; which had first been browned in a little butter with a pinch of salt<\/li>\n<li><span style=\"color: #ff0000;\">*<\/span> we shared bottles of 2 different kinds of Bamberg\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Smoked_beer\">Rauchbiere<\/a>\u00a0<\/em>(more about both my own ancient and Barry&#8217;s more recent connection to that very special beer <a href=\"https:\/\/twitter.com\/bhoggard\/status\/206735443197308929\">here<\/a>, and\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/10\/kassler-senf-bierkraut-saltzkartoffeln-zwei-rauchbiere\/\">here<\/a>), <a href=\"http:\/\/www.schlenkerla.de\/indexe.h\">Schlenkerla<\/a>&#8216;s &#8216;Fastenbier&#8217;
