Actually, the\u00a0desire for simplicity\u00a0was driven at least as much by a consideration of the short time\u00a0I had for preparation, since we wouldn&#8217;t return from the theater (<a href=\"https:\/\/www.nytimes.com\/2017\/11\/26\/theater\/59e59-theaters-spring-2018-season.html?_r=0\">the Civilians\u2019 &#8216;The Undertaking&#8217;<\/a>) until after 9:30.<\/p>\n<p>We were sitting down to this meal\u00a0less than an hour later, even though I had taken my time putting it together, and we enjoyed a drink first, while talking about <a href=\"https:\/\/en.wikipedia.org\/wiki\/Steve_Cosson\">Steve Cossen<\/a>&#8216;s terrific play.<\/p>\n<ul>\n<li>one 11-ounce yellowfin tuna steak off of <a href=\"http:\/\/articles.orlandosentinel.com\/2005-05-22\/news\/0505210024_1_find-the-fish-fresh-fishing-tackle\">Scott Rucky\u2019s fishing vessel, \u2018Dakota\u2019<\/a>, from American Seafood Company, cut into 2 pieces, rubbed, tops and bottoms, with a mixture of a dry Sicilian fennel seed from Buon Italia that had been crushed in a mortar and pestle along with a little dried <em>peperoncino Calabresi secchi<\/em>\u00a0from Buon Italia, then sea salt and freshly-ground black pepper, pan-grilled above a\u00a0brisk\u00a0flame (for\u00a0barely a minute on each side), finished on the plates with a good squeeze of the juice of an organic lemon from Whole Foods Market and some olive oil, served with micro kohlrabi from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p>There were green vegetables at the Union Square Greenmarket on Saturday &#8211; and this was near\u00a0the end of January! I had already picked up\u00a0both Savoy and red cabbage earlier in the week, but\u00a0now I took home some Brussels sprouts, on the stalk, and a large bunch of kale.\u00a0 I could probably make it through an entire week with these stocks, and then I could start dreaming of the earliest wild spring green stuff.<\/p>\n<p>Because it would be slightly less time-consuming than roasting the sprouts, and probably a better match with the tuna, I decided it\u00a0was to be the\u00a0kale that\u00a0would go into this meal.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-15324\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/01\/late_January_kale.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>winter kale from Hoeffner Farms, washed, drained, wilted\u00a0inside a large enameled cast iron pot in a tablespoon or so of olive oil in which 2\u00a0bruised and halved cloves of Rocambole garlic from Keith\u2019s Farm had first been allowed to sweat and begin to color, the greens seasoned with sea salt, freshly-ground black pepper, and arranged on the plates and a little more olive oil drizzled on top<\/li>\n<li>pieces of a\u00a0whole wheat baguette from Runner &amp; Stone Bakery<\/li>\n<li>the wine was a California (North Coast, Lodi and Clarksburg) ros\u00e9,\u00a0<a href=\"https:\/\/us.nakedwines.com\/products\/evangelos-bagias-california-rose-2016\">Evangelos Bagias California Rose 2016<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/full_site\">Naked Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=168043\">Handel&#8217;s gorgeous 1709 (Venice) opera, &#8216;Agrippina&#8217;<\/a>,\u00a0John Eliot Gardiner conducting the English Baroque Soloists, with\u00a0Donna Brown, Anne Sofie von Otter, Julian Clarkson, Michael Chance, Derek Lee Ragin, Della Jones, Alastair Miles, George\u00a0Mosley,\u00a0and Jonathan Peter Kenny<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m nursing myself back to health by continuing to cook every\u00a0day, and last night I started to get back to serious start-from-scratch cooking\u00a0with\u00a0a really simple meal.
