{"id":15252,"date":"2018-01-09T22:31:39","date_gmt":"2018-01-09T22:31:39","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=15252"},"modified":"2018-01-09T22:31:39","modified_gmt":"2018-01-09T22:31:39","slug":"crab-cakes-salsa-dandelion-potatoes-lovage-scallion","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=15252","title":{"rendered":"crab cakes, salsa, dandelion; potatoes, lovage, scallion"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-15256\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/01\/crab_cakes_salsa_potatoes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Crab cakes from the Union Square Greenmarket: They&#8217;re an invitation to improvise, incredibly simple to &#8216;cook&#8217;, and always delicious.<\/p>\n<p>The fishers were unable to bring anything to the market on Monday, because the intense cold had meant they wouldn&#8217;t be able to go out on the ocean, so I reached into the freezer\u00a0for\u00a0my small reserve stock of crab cakes.<\/p>\n<ul>\n<li>two crab cakes from\u00a0<a href=\"https:\/\/janniesusan.blogspot.com\/2015\/10\/an-abundant-life-catch-of-day.html\">PE &amp; DD Seafood<\/a>\u00a0(crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), defrosted earlier in the evening, heated with a drizzle of olive oil inside a heavy oval enameled cast iron\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served on a\u00a0salsa composed of 8 or so chopped Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, sea salt, freshly-ground black pepper, a bit of a powdered proprietary seasoning blend,\u00a0<a href=\"http:\/\/www.nyshuk.com\/shop\/lekama\">L\u2019eKama<\/a>,\u00a0a small bit of dried <em>peperoncino Calabresi secchi<\/em> from Buon Italia, chopped\u00a0winter savory\u00a0from Stokes Farm, and a number of really tiny chopped scallions from Willow Wisp Farm,\u00a0garnished\u00a0with a sprinkling of\u00a0micro amaranth from Two Guys from Woodbridge, the salsa itself arranged on the plates partially on top of some leaves torn from a live hydroponic plant from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-15257\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2018\/01\/purple_potatoes.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>small &#8216;Peter Wilcox&#8217; purple-skinned white flesh potatoes,\u00a0boiled inside a large vintage Corning\u00a0<a href=\"http:\/\/www.ndga.net\/articles\/gmflameware.php\">Pyrex Flameware<\/a>\u00a0blue-glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>, along with a generous amount of salt until barely cooked through, drained, halved, dried inside the still warm pot, tossed with a tablespoon or so of olive oil, and one chopped Japanese scallion (a bit like a leek) from Norwich Meadows Farm, sprinkled with a little sea salt, freshly-ground black pepper, and\u00a0chopped lovage, again from\u00a0Two Guys from Woodbridge, arranged on the plates and garnished with homemade breadcrumbs which had first been browned in a little olive oil with a pinch of sea salt<\/li>\n<\/ul>\n<p>There was a cheese course, and this time it included both fruit and toasts, plus one extra tidbit.<\/p>\n<ul>\n<li>\n<div>Consider Bardwell &#8216;Rupert&#8217; goat cheese and a soft goat, a chevre, from\u00a0Ardith Mae that our neglect since purchasing it farther back than I can recall, had inadvertently &#8211; and pretty surprisingly &#8211; allowed to mature beautifully<\/div>\n<\/li>\n<li>one\u00a0Seckel\u00a0pear from Caradonna Farms in the Union Square Greenmarket<\/li>\n<li>toasts from a\u00a0She Wolf Bakery polenta boule<\/li>\n<li>beet chips&#8217; (thin slices of oven-dried beet) from Lani&#8217;s Farm<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout the meal was a California (Clarksburg) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/products\/richard-bruno-clarksburg-chenin-blanc-2016\">Richard Bruno Clarksburg Chenin Blanc 2016<\/a>, from Naked Wines<\/li>\n<li>the music was an album of <a href=\"https:\/\/andrisnelsons.com\/cds\/boston-symphony-orchestra-wagner-sibelius\/\">Andris Nelsons conducting the Boston Symphony in Wagner&#8217;s\u00a0overture\u00a0to &#8216;Tannh\u00e4user&#8217;, and\u00a0Sibelius&#8217;\u00a0Symphony No. 2 in D, opus 43<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Crab cakes from the Union Square Greenmarket: They&#8217;re an invitation to improvise, incredibly simple to &#8216;cook&#8217;, and always delicious.
