They\u00a0had totally run out of their supply.<\/p>\n<p>Considering my options while standing near the glass display cases of\u00a0the fresh pasta counter, I decided to pick up some\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Mafaldine\">Reginette<\/a>, partly because of its\u00a0entertaining shape.\u00a0 Then I remembered seeing at least 4 different colored chicories\u00a0when I had checked out the produce section, some of them even described as from USA farms.<\/p>\n<p>The little meal had now been described almost entirely.<\/p>\n<p>It had all the virtues of a meal for the occasion, including this time, since we normally stay home on this grand night,\u00a02 we have almost never needed before: Simplicity of execution and quick\u00a0disassembly afterwards.<\/p>\n<ul>\n<li>two\u00a0tablespoons of olive oil inside a large high-sided tin-lined copper pot, adding one chopped red shallot from Norwich Meadows Farm until softened and pungent, followed by 2 beautiful\u00a0 roughly-chopped small Treviso (they were the same size as, and looked very much like endive edged rose-red) which were stirred until themselves softened, half\u00a0of a cup of an Italian (Marche) white,\u00a0<a href=\"http:\/\/www.saladinipilastri.it\/en\/vini_bianchi.php\">Saladini Pilastri Falerio<\/a>\u00a02015 added and boiled down until\u00a0the liquid was mostly gone, 3 &#8216;nests&#8217;, or about 12 ounces, of\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2016\/09\/14\/bresaola-mafaldine-with-garlic-red-onion-tomatoes-basil\/\">mafaldine<\/a>\u00a0(semolina flour, water) from Flatiron Eataly, the cooked pasta added, stirred with some of the reserved pasta water until the liquid had emulsified, served in shallow bowls, a little olive oil poured around the edges, garnished with micro scallions from Two Guys from Woodbridge,\u00a0and sprinkled with\u00a0Parmigiano Reggiano Hombre from Whole Foods Market<\/li>\n<li>the wine was\u00a0an Italian (Sardinia) white,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/sella-and-mosca-spa\/wines\/la-cala-vermentino-di-sardegna-2015\">La Cala Vermentino di Sardegna\u00a02015<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=813036\">Vivaldi&#8217;s &#8216;Orlando&#8217; (1714 Version),\u00a0Federico Maria Sardelli conducting the\u00a0\u00a0Modo Antiquo Ensemble<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I waited too long to head out to Eataly for some crabmeat, which I had thought would be the only possibility for an elegant New Years Eve dinner I had\u00a0planned only at the last minute.
