All of its major\u00a0elements however came fresh from local producers, and had been in the Union Square Greenmarket this week. Not quite making that cut were the tomatoes, which came from Maine, meaning that, while they weren&#8217;t quite local, they didn&#8217;t come from thousands of miles away. Otherwise, the real locavore exceptions were the olive oil, butter, salt, pepper, lemon, and vinegar.<\/p>\n<p>The pole beans were a big December surprise, and they were delicious. I managed to gather up the last of them\u00a0from inside the farmer&#8217;s bucket yesterday.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14794\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/12\/pole_beans.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>two 8-ounce flounder fillets from Pura Vida Seafood, lightly\u00a0seasoned,\u00a0saut\u00e9ed\u00a0 with the flesh side down for about\u00a03 minutes\u00a0in a tablespoon each of olive oil and butter inside a heavy old, tin-lined copper pan over medium-high heat, turning once and cooking for another 2 minutes or so, placed on the plates, a couple of spoonfuls of \u2018tomato butter\u2019 [see the bullet below]\u00a0arranged\u00a0on each fillet<\/li>\n<li>tomato butter, begun\u00a0by melting 3 tablespoons of melted butter inside\u00a0a 19th-century enameled cast iron porringer, adding 2\u00a0finely-chopped small\u00a0Japanese scallions from Norwich Meadows Farm until they\u00a0were slightly soft and fragrant, letting the flavored butter cool slightly before being poured over 4 ounces of Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, cut into eighths, adding 2\u00a0tablespoons of fresh\u00a0chopped tarragon from\u00a0Willow Wisp Organic Farm, the mix seasoned with salt,\u00a0and adding a few drops of good Spanish Rioja wine vinegar<\/li>\n<li>some leaves from a\u00a0live mesclun plant from Two Guys from Woodbridge, dressed with a bit of a very good Sicilian olive oil, Maldon salt, freshly-ground black pepper, and a small squeeze\u00a0from an organic Whole Foods Market lemon<\/li>\n<li>yellow pole beans from Norwich Meadows Farm, blanched, reheated as later as the fish was finishing cooking in a bit of olive oil, seasoned with sea salt and freshly-ground black pepper and finished with a drizzle of olive oil and a sprinkling of micro scallion from Two Guys from Woodbridge<\/li>\n<li>the wine was an Argentinian (Cafayate\/Salta) white,\u00a0<a href=\"http:\/\/www.elporvenirdecafayate.com\/en\/wine\/amauta-torrontes\/\">Amauta Torront\u00e9s 2016<\/a>\u00a0from <a href=\"http:\/\/www.philippeliquorsnyc.com\/\">Phillipe Wines<\/a><\/li>\n<li>the music was <a href=\"https:\/\/en.wikipedia.org\/wiki\/Jean-Baptiste_Lully\">Lully<\/a>&#8216;s 1674\u00a0\u00a0<i><a class=\"mw-redirect\" title=\"French lyric tragedy\" href=\"https:\/\/en.wikipedia.org\/wiki\/French_lyric_tragedy\">trag\u00e9die en musique<\/a>,<\/i>\u00a0&#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Alceste_(Lully)\">Alceste<\/a>&#8216;,\u00a0<a id=\"ProductInfoArtistLink\" class=\"a-size-medium a-link-normal\" href=\"https:\/\/www.amazon.com\/dp\/B077H8KC8Z\/ref=dm_ws_ps_adp\">Christophe Rousset directing Les Talens Lyriques, with Judith van Wanroij, Edwin Crossley-Mercer, Emiliano Gonzales Toro, Bre Williams, Etienne Bazola, B\u00e9n\u00e9dicte Tauran, Luc\u00eda Mart\u00edn-Cart\u00f3n, Enguerrand de Hys, and the Ch\u0153ur de chambre Namur<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I didn&#8217;t plan it that way, but\u00a0last night&#8217;s dinner looks very much like a summer meal.
