Although there are always small variations\u00a0among the secondary ingredients, if not in both the fish and the greens, I have no idea how one of those meals can end up as exceptionally delicious as the one I put together tonight.<\/p>\n<p>If I had to make a guess, I&#8217;d say\u00a0it was because\u00a0this time I\u00a0had incorporated\u00a0a fairly generous amount of fresh habanada pepper in the coating for the fish, and that these particular\u00a0Chinese greens, which I had never used before, were pretty extraordinary.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14740\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/11\/Yu_Choy_sum.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>In a related note to file, this cook asks, &#8216;whatever did cooks do before lemon?&#8217;<\/p>\n<ul>\n<li><span style=\"color: #ff0000;\">*<\/span> two 8-ounce hake fillets from\u00a0P.E &amp; D.D. Seafood,\u00a0dredged in local\u00a0<a href=\"http:\/\/ncfarms.net\/\"><span class=\"s2\"><b>North Country Farms Stone Ground Whole Wheat Flour<\/b><\/span><\/a>\u00a0which had been seasoned with plenty of sea salt and freshly-ground\u00a0black pepper, then dipped into a shallow bowl in which one\u00a0egg from Millport Dairy Farm, about a tablespoon of Trickling Springs Creamery milk, and\u00a0one chopped fresh\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/?s=habanada+pepper\">habanada pepper<\/a>\u00a0from Norwich Meadows Farm had been beaten together with a fork, the filets saut\u00e9ed in 2 tablespoons of\u00a0<span class=\"s2\"><b><a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/\">Organic Valley \u2018Cultured Pasture Butter\u2019<\/a>\u00a0<\/b>along<b>\u00a0<\/b><\/span>with\u00a05 or 6 large sage leaves from Phillips Farm inside a heavy rectangular enameled cast iron pan for about\u00a07 minutes, turning the\u00a0hake half of the way through, sprinkled with organic lemon juice from Whole Foods Market\u00a0and the\u00a0small amount of pan juices that remained, arranged on 2 plates, garnished with chopped parsley parsley from Norwich Meadows Farm and chopped lovage from Two Guys from Woodbridge,\u00a0served with lemon wedges on the side<\/li>\n<li><span style=\"color: #ff0000;\">*<\/span> purple <a href=\"https:\/\/en.wikipedia.org\/wiki\/Choy_sum\">yu\u00a0choy sum<\/a>\u00a0from Lan&#8217;s Farm, washed several times and drained, roughly chopped,\u00a0wilted inside a large enameled cast iron pot in a tablespoon or so of olive oil in which\u00a02 bruised and halved cloves of Rocambole garlic from Keith\u2019s Farm had first been allowed to sweat and begin to color, the greens seasoned with sea salt and freshly-ground black pepper, arranged on the plates and finished with a squeeze of lemon juice and more olive oil drizzled on top<\/li>\n<li><span style=\"color: #ff0000;\">*<\/span> slices from an organic multigrain baguette from Bread Alone<\/li>\n<li>the wine was a California (Lodi) white, Jacqueline Bahue Albarino California 2015, from <a href=\"https:\/\/us.nakedwines.com\/full_site\">Naked Wines<\/a><\/li>\n<li><span style=\"color: #ff0000;\">*<\/span> the music was a tour de <em>farce<\/em>, exciting virtuoso performances of an exciting series of baroque arias written by 1733 for\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1600864\">Johann Adolf Hasse&#8217;s, &#8216;<em>Siroe, Re di Persia,\u00a0<\/em>George Petrou conducting Armonia Atenea, with\u00a0 Julia Lezhneva, Franco Fagioli, Mary-Ellen Nesi, Max Emanuel Cencic, and others<em>\u00a0<\/em><\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;ve prepared essentially this same meal\u00a0a number of\u00a0times before.
