{"id":14695,"date":"2017-11-26T06:29:53","date_gmt":"2017-11-26T06:29:53","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=14695"},"modified":"2017-11-26T06:29:53","modified_gmt":"2017-11-26T06:29:53","slug":"oregano-pepperoncino-habanada-lemon-roasted-squid-radish","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=14695","title":{"rendered":"oregano\/chili\/habanada\/lemon-roasted squid; mizuna"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14696\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/11\/squid_mizuma.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I was afraid I might have gone overboard\u00a0in gilding a magnificent sea creature this time,\u00a0reaching beyond the formula in the original <a href=\"https:\/\/wtfdoieattonight.com\/2011\/05\/19\/river-cafe-easy-roast-squid-recipe\/\">River Caf\u00e9 Cookbook recipe<\/a> in order to add, not just <a href=\"http:\/\/food.hoggardwagner.org\/?s=habanada+pepper\">habanada<\/a>, but <em>fresh<\/em> habanada to the mix with which I would roast some squid,\u00a0and then, as a\u00a0final garnish, some micro radish. But,\u00a0possibly because this time\u00a0the cephalopods were on a\u00a0much\u00a0more generous scale than usual, the result was a very, very good dish.<\/p>\n<ul>\n<li>a large rectangular enameled cast iron pan heated on top of the stove until hot, its cooking surface brushed with olive oil, and once the oil was also quite hot, one pound of rinsed and carefully dried large squid from P.E. &amp; D.D. Seafood, mostly bodies, which were cut into smaller pieces but a few tentacles as well, also cut into smaller pieces, quickly arranged inside and immediately sprinkled with a heaping teaspoon of super-pungent dried Sicilian oregano from Buon Italia, one dried Sicilian pepperoncino, also from Buon Italia, and one large chopped fresh habanada pepper from Norwich Meadows Farm, sea salt and freshly-ground black pepper, followed by a drizzle of\u00a03 tablespoons of organic juice from a\u00a0Whole Foods lemon, and some olive oil, the pan placed inside a pre-heated 400\u00ba oven and roasted for only 5 or 6 minutes, removed, the squid distributed onto 2 plates, ladled with a bit of their cooking juices, which had been transferred into a sauce pitcher, scattered with purple micro radish from Two Guys from Woodbridge<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14708\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/11\/mizuna.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one bunch of mizuna from Paffenroth Gardens, wilted inside a large enameled cast iron pan in a little olive oil, seasoned with salt and pepper and served drizzled with a bit more oil<\/li>\n<li>the wine was an Oregon (Willamette Valley) white,\u00a0<a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=33479\">99 West, Pinot Gris 2016<\/a>, from <a href=\"http:\/\/www.astorwines.com\/Default.aspx\">Astor Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=40718\">Carl Nielsen&#8217;s 1924-1925 Symphony no 6, &#8216;Sinfonia Semplice&#8217;,\u00a0Neeme J\u00e4rvi conducting the Gothenburg Symphony Orchestra<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I was afraid I might have gone overboard\u00a0in gilding a magnificent sea creature this time,\u00a0reaching beyond the formula in the original River Caf\u00e9 Cookbook recipe in order to add, not just habanada, but fresh habanada to the mix with which I would roast some squid,\u00a0and then, as a\u00a0final garnish, some micro radish.
