{"id":14646,"date":"2017-11-23T06:23:13","date_gmt":"2017-11-23T06:23:13","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=14646"},"modified":"2017-11-23T06:23:13","modified_gmt":"2017-11-23T06:23:13","slug":"grilled-fennel-chili-coated-tuna-chervil-red-russian-kale","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=14646","title":{"rendered":"grilled fennel-chili-coated tuna, chervil; red Russian kale"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14647\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/11\/tuna_red_Russian_kale.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>It was like the night before Christmas, or any number of other Catholic feast days, where there is fasting on the eve of the big event, and a big feast the next day: Tonight we enjoyed a little tuna, simply prepared, and a green which also could hardly have been more simple.<\/p>\n<p>Tomorrow it will be Thanksgiving.<\/p>\n<ul>\n<li>one 12-ounce\u00a0Yellowfin tuna steak from Blue Moon Seafood, cut into two sections, rubbed, tops and bottoms, with a mixture of a dry Sicilian fennel seed from Buon Italia that had been crushed in a mortar and pestle along with a little dried\u00a0<em>peperoncino Calabresi secchi<\/em>\u00a0from Buon Italia,\u00a0then seasoned with sea salt and freshly-ground\u00a0black pepper, pan-grilled above a medium-high flame (for only a little more than a minute or so on each side), finished on the plates with a good squeeze of the juice of an organic lemon from Whole Food Market and some olive oil, served with micro chervilfrom\u00a0Two Guys from Woodbridge<\/li>\n<li>red kale from Campo Rosso farm,\u00a0washed, drained, wilted\u00a0inside a large enameled cast iron pot in a tablespoon or so of olive oil in which 2\u00a0bruised and halved cloves of Rocambole garlic from Keith&#8217;s Farm had first been allowed to sweat and begin to color, the greens seasoned with sea salt, freshly-ground black pepper, and arranged on the plates and a little more olive oil drizzled on top<\/li>\n<li>the wine was an Italian (Marche) white,\u00a0<a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?p=1&amp;search=37023&amp;searchtype=Contains\">Passerina, Tenuta Santori 2016<\/a>, from <a href=\"http:\/\/www.astorwines.com\/Default.aspx\">Astor Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=40718\">Carl Nielsen&#8217;s very moving 1914-1916 war symphony [my description), his No, 4, &#8216;Inextinguishable&#8217;,\u00a0with Neeme J\u00e4rvi conducing the\u00a0Gothenburg Symphony Orchestra\u00a0<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was like the night before Christmas, or any number of other Catholic feast days, where there is fasting on the eve of the big event, and a big feast the next day: Tonight we enjoyed a little tuna, simply prepared, and a green which also could hardly have been more simple.
