I wanted to serve fish, and in fact the date\u00a0for our gathering was settled partly on the basis of it being a Greenmarket day, where I might find at least one fish stall. Because of the focus of the evening the entr\u00e9e choice couldn&#8217;t be too time-consuming or distracting, but it should be expected to please.<\/p>\n<p>I picked skate wings, and I slightly abbreviated\u00a0the recipe I use most of the time, but it all worked\u00a0out fine, with the\u00a0help of some great eggplant.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14639\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/11\/Japanese_eggplant.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>six\u00a0small\u00a0skate wings from\u00a0P.E. &amp; D.D. Seafood,\u00a0coated all over with a\u00a0<em>local<\/em>\u00a0coarse polenta (<a href=\"https:\/\/wildhivefarm.com\/product\/stone-ground-polenta\/\">\u2018Stone-Ground Polenta\u2019 from Wild Hive Farm Community Grain Project<\/a>), seasoned with salt and pepper, saut\u00e9ed in olive oil and a bit of butter for 3 minutes or so on each side inside 2 heavy enameled cast iron oven pans (to avoid crowding), removed to the plates and kept warm while about 1 to 2 tablespoons of butter and sliced red scallions from Hawthorne Valley were introduced into the pan and stirred over a now-lowered flame,\u00a0just enough\u00a0to allow the\u00a0onion to sweat a bit before the heat was\u00a0turned off altogether and another 1\u00a0to 2\u00a0tablespoons of butter added to the pan along with the juice from a little more than half of a local sweet lemon from Fantastic Gardens of Long Island, the pan stirred for a bit to blend\u00a0everything\u00a0and make a proper sauce, which was poured over the skate\u00a0wings, which were garnished with\u00a0a\u00a0scattering of micro\u00a0chervil from\u00a0Two Guys from Woodbridge<\/li>\n<li>green and purple\u00a0leaf lettuce [from Lani&#8217;s Farm, I think], dressed with a good olive oil, salt, and pepper<\/li>\n<li>six small Japanese eggplants from Lani&#8217;s Farm, each cut in half\u00a0 lengthwise and brushed with a mixture of olive oil, finely-chopped Rocambole garlic from Keith&#8217;s Farm, chopped peppermint from Lani\u2019s Farm, sea salt, and freshly-ground Tellicherry pepper, the eggplant\u00a0pan-grilled, turning once or more, then arranged on an oval platter, sprinkled with more chopped peppermint, and drizzled with a little olive oil<\/li>\n<li>there were many wines, but all\u00a0except for the New Mexico (Sierra County)\u00a0sparkling white,\u00a0<a href=\"http:\/\/www.astorwines.com\/SearchResultsSingle.aspx?search=16934\">Gruet Brut NV<\/a>, from\u00a0<a href=\"http:\/\/www.astorwines.com\/Default.aspx\">Astor Wines &amp; Spirits<\/a>, which preceded the meal, were from\u00a0<a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a>;\u00a0the first still wine was\u00a0a California (Sonoma) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/scott-peterson-rumpus-california-sauvignon-blanc-2016.htm\">Scott Peterson Rumpus California Sauvignon Blanc 2016<\/a><\/li>\n<li>the music was our conversation<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>We were having a guest for dinner, but there was to be some serious conversation about a joint project before we sat down.
