We may have been\u00a0among a very small number of people, anywhere in the world, who enjoyed this combination for dinner last night. If it belongs to any particular cuisine, I&#8217;d say it&#8217;s that of the perpetually-evolving Union Square Greenmarket cookery.<\/p>\n<p>I also\u00a0brought home some bronze fennel\u00a0on Saturday, and I knew it would go somewhere in the meal that was evolving in my head.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14499\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/10\/bronze_fennel.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>two thick 10-ounce pork chops from <a href=\"http:\/\/flyingpigsfarm.com\/\">Flying Pigs Farm<\/a>,\u00a0thoroughly dried, seasoned with sea salt and a generous amount of freshly-ground\u00a0black pepper, seared quickly on both sides inside a very hot, heavy oval enameled cast-iron pan, half of an organic lemon from\u00a0Trader Joe&#8217;s Market squeezed over both, after which the lemon was left on the pan surface between the chops,\u00a0which was then placed\u00a0inside a 400\u00ba oven for about 13-14 minutes (flipped halfway through, the lemon squeezed over the\u00a0top once again, and replaced in the pan), the finished chops\u00a0removed from the oven and arranged on 2 plates, some of the pan juices poured\u00a0over the top of the chops, the remainder poured into a sauce boat for use\u00a0at the table, garnished with bronze fennel fronds from Campo Rosso Farm<\/li>\n<li>eight small Turkish eggplants, possibly the last of the season, judging from their ripeness, from Norwich Meadows Farm, each cut horizontally into 3 or more slices [although I should have sliced them less thinly], mixed with a little olive oil,\u00a0one large chopped Rocambole garlic clove from Keith&#8217;s Farm, sea salt, and freshly-ground black pepper, pan-grilled on an enameled cast iron ribbed pan over a brisk flame, turning once or twice, 2 chopped scarlet of Japanese scallions from Norwich Meadows Farm and 8 pitted and halved Kalamata olives added near the end, tossed in a bowl with chopped mint leaves from Alex&#8217;s Tomato Farm, arranged on the plates, and drizzled with olive oil<\/li>\n<li>red watercress from Max Fish Hatchery, washed, drained,\u00a0dried, and dressed with a bit of good Puglian olive oil,\u00a0<a href=\"http:\/\/alce-nero-e-mielizia-s-p-a.allbiz.it\/olio-extravergine-di-oliva-italiano-dop-terre-di-g101481\">Alce Nero DOP \u2018Terra di Bari Bitonto<\/a>,\u00a0from the Flatiron Eataly Market, Maldon salt, and freshly-ground black pepper<\/li>\n<li>the wine was a South African (Western Cape) ros\u00e9, <a href=\"http:\/\/www.mulderbosch.com\/our-wines\/cabernet-sauvignon-rose\/2016-cabernet-sauvignon-rose\">Mulderbosch\u00a0Cabernet Sauvignon Ros\u00e9 2016<\/a>, from\u00a0<a href=\"http:\/\/www.philippeliquorsnyc.com\/\">Philippe Liquors and Wine<\/a><\/li>\n<li>the music was <a href=\"https:\/\/www.operanews.com\/Opera_News_Magazine\/2015\/7\/Recordings\/STEFFANI__Niobe,_Regina_di_Tebe.html\">Agostino Steffani&#8217;s &#8216;Niobe, Regina di Tebe&#8217;, in a 2015 performance by the\u00a0Boston Early Music Festival Orchestra,\u00a0under the direction of\u00a0Paul O\u2019Dette and Stephen Stubbs<\/a>; the opera <a href=\"https:\/\/en.wikipedia.org\/wiki\/Niobe,_regina_di_Tebe\">premiered at the Munich court theatre during Carnival, in 1688<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Pork chops, Turkish eggplant,\u00a0red cress.
