{"id":14433,"date":"2017-09-28T23:50:22","date_gmt":"2017-09-28T23:50:22","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=14433"},"modified":"2017-09-28T23:50:22","modified_gmt":"2017-09-28T23:50:22","slug":"grilled-spanish-mackerel-tomato-salsa-japanese-turnips","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=14433","title":{"rendered":"grilled Spanish mackerel, tomato salsa; Japanese turnips"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14434\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/mackerel_tunips.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p class=\"p1\"><span class=\"s1\">I looked for mackerel when I arrived at the fishmonger&#8217;s on Wednesday, since I was hoping to\u00a0introduce some to\u00a0the\u00a0cherry\u00a0tomatoes I&#8217;d been husbanding in our kitchen.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">I had bought the tomatoes one week earlier, when they were less red, less ripe, less sweet,\u00a0and I had\u00a0kept them on a north window sill until they were perfect.<\/span><\/p>\n<p class=\"p1\">Here&#8217;e what they looked like while in the Union Square Greenmarket, still looking more orange than red.<\/p>\n<p class=\"p1\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14441\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/best_cherry_tomatoes-1.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p class=\"p1\"><span class=\"s1\">The turnips, which I had purchased the same day I cooked them, were already very sweet. Turnips may not have been the perfect complement for this fish, but it was an interesting conversation.<\/span><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14437\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/Japanese_turnips.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul class=\"ul1\">\n<li class=\"li1\"><span class=\"s1\">fifteen ounces of Spanish mackerel (4 fillets) from Blue Moon Fish, washed, dried, brushed lightly with olive oil and seasoned with sea salt and freshly-ground black pepper, pan grilled over high heat for 6 or 7 minutes, first skin side down, turned half way through, removed and\u00a0arranged on the plates with a salsa consisting of 8\u00a0ounces or so of gorgeous, perfectly ripe cherry tomatoes from Stokes Farm, halved, that had been tossed with 3 teaspoons of olive oil, a little more than a teaspoon of Sicilian salted capers (first rinsed and drained), half a tablespoon of juice from\u00a0a\u00a0Trader Joe&#8217;s organic lemon,\u00a0sea salt, freshly-ground black pepper, and some chopped oregano from Keith&#8217;s Farm, garnished with a little more oregano<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">a handful of Hakurei turnips (or &#8216; Japanese turnips&#8217;) from Willow Wisp Farm, separated\u00a0from their beautiful greens, leaving a bit of stem on each, scrubbed and\u00a0 halved vertically, saut\u00e9ed\u00a0inside a heavy medium-size tin-lined high-sided copper pan\u00a0in a little olive oil, in which\u00a0one thickly-sliced garlic clove from Keith&#8217;s Farm had been softened, until\u00a0the vegetables\u00a0had begun to color, then removed and set aside while the washed and very roughly cut greens were introduced to the pan and heated until barely wilted, the turnips returned to the pan and everything seasoned with sea salt and freshly-ground black pepper<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">the wine was an Italian (Tuscany) ros\u00e9,\u00a0<a href=\"https:\/\/www.skurnik.com\/sku\/il-rose-di-casanova-casanova-della-spinetta-2-2\/\">Il Rose di Casanova, Casanova della Spinetta<\/a>, from Philippe Wines<\/span><\/li>\n<li class=\"li1\"><span class=\"s1\">the music was <a href=\"https:\/\/csoarchives.wordpress.com\/2012\/04\/20\/solti-65-gramophone-hall-of-fame\/\">a great classic recording of Mozart\u2019s &#8216;Le nozze di Figaro&#8217;<\/a>, Georg Solti conducting the London Philharmonic Orchestra and the London Opera Chorus, with\u00a0Thomas Allen, Kiri Te Kanawa,\u00a0Lucia Popp,\u00a0Samuel Ramey, Frederica von Stade, Jane Berbi\u00e9, Kurt Moll, Robert Tear, Philip Langridge, Yvonne Kenny, and Giorgio Tadeo, with Jeffrey Tate, continuo<br \/>\n<\/span><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I looked for mackerel when I arrived at the fishmonger&#8217;s on Wednesday, since I was hoping to\u00a0introduce some to\u00a0the\u00a0cherry\u00a0tomatoes I&#8217;d been husbanding in our kitchen.
