sweet peppers; potatoes, fennel"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14374\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/lemon_sole_pepper_potatoes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The best sole I&#8217;ve ever prepared.\u00a0Did it\u00a0start with the size of the fillet?\u00a0 It <em>was<\/em> thicker than any I\u00a0remember ever having cooked, and I mostly followed\u00a0<a href=\"https:\/\/www.epicurious.com\/recipes\/member\/views\/pan-seared-lemon-sole-fillets-50058800\">a recipe<\/a>\u00a0I hadn&#8217;t worked with before.<\/p>\n<p>But it was also very fresh.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14384\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/lemon_sole_raw.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Was\u00a0the entr\u00e9e Italian or French?<\/p>\n<p>I\u00a0originally thought I would accompany it by pan-roasting some\u00a0small okra, mostly because I had\u00a0some inside\u00a0the refrigerator, but Barry pushed for buttered boiled potatoes, as more sympathetic to this recipe, and I knew I had on hand some of the very best, sitting inside a covered basket\u00a0waiting to be summoned.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14386\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/German_Butterball_potatoes.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p>There was another\u00a0vegetable, a newly-bred sweet pepper, and its introduction to the mix meant that the\u00a0meal&#8217;s cultural roots couldn&#8217;t be described as anything other than &#8216;New York City in the teens&#8217;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14387\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/Mad_Hatter_peppers.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>a portion of a\u00a0thick lemon sole\u00a0from Pure Vida Seafood (13 ounces), divided into 2 pieces, salted, coated with\u00a0<a href=\"http:\/\/ncfarms.net\/\">North Country Farms Stone Ground Whole Wheat Flour<\/a>\u00a0and set aside while 6 thin slices of an organic lemon from Trader Joe&#8217;s Market were placed in more than a tablespoon of melted butter inside a large heavy tin-lined oval copper pan over medium heat and\u00a0cooked until the lemon\u00a0had slightly browned, or about 2 minutes (it may be necessary to add more butter, or a bit of olive oil), when they were pushed to the side of the pan\u00a0the 2 pieces of sole added, turned once, and cooked until done, or until the flesh was no longer translucent (a little more than 2\u00a0minutes per side), 2 more tablespoons of butter and\u00a0more than a teaspoon of\u00a0\u00a0salted Sicilian capers, ,thoroughly rinsed, added to the skillet, which was then removed from the heat\u00a0and tilted to swirl the butter until it melted, the sole and lemon arranged on individual plates, the capers, butter, and juices spooned\u00a0 over the top, micro sorrel from Two Guys from Woodbridge arranged as a garnish<\/li>\n<li>German Butterball potatoes from Berried Treasures, Farm, scrubbed, boiled unpeeled in salted water until barely cooked through, drained, dried in the large still-warm vintage Corning\u00a0<a href=\"http:\/\/www.ndga.net\/articles\/gmflameware.php\">Pyrex Flameware<\/a>\u00a0blue-glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>\u00a0in which they had cooked,\u00a0a couple tablespoons of\u00a0rich\u00a0<a href=\"https:\/\/www.organicvalley.coop\/products\/butter\/pasture-butter\/\">Organic Valley \u2018Cultured Pasture Butter\u2019<\/a>\u00a0[with\u00a012 grams of fat per 14 grams, for each\u00a0tablespoon of butter; American butter almost always has only\u00a0<em>11<\/em>grams, which makes a surprising difference in taste and texture], the\u00a0potatoes seasoned with sea salt and black pepper and arranged on the plates, where they were sprinkled with\u00a0micro fennel from Windfall Farms<\/li>\n<li>two\u00a0small &#8216;mad hatter&#8217; peppers from <a href=\"https:\/\/homesweethomegrown.com\/\">Homesweet Homegrown<\/a>\u00a0in the Union Square Greenmarket, deconstructed by being sliced thinly, producing star-like shapes, saut\u00e9ed until softened in a little olive oil inside a small tin-lined copper pan, seasoned with sea salt and black pepper, garnished on the plates with a little chopped fennel frond from a fennel bulb from\u00a0Hawthorne Valley Farm<\/li>\n<\/ul>\n<p>There was a cheese course, not pictured, which included a\u00a0terrific bread.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14382\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/ciabatta_Bread_Alone.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>three different cow cheeses, all from Consider Bardwell\u00a0Farm: &#8216;Pawlet&#8217;, &#8216;Rupert&#8217;, and &#8216;Bardem Blue &#8211; Reconsidered&#8217;<\/li>\n<li>slices\u00a0of a\u00a0ciabatta\u00a0(with local unbleached wheat flours) from Bread Alone<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine was a South African (Western Cape) white,\u00a0<a href=\"https:\/\/flatiron-wines.com\/neil-ellis-chardonnay-sincerely-2016\">Neil Ellis, Chardonnay &#8216;Sincerely&#8217;, 2016<\/a>, from <a href=\"https:\/\/flatiron-wines.com\/\">Flatiron Wines<\/a><\/li>\n<li>the music was the album, &#8216;<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=2259093\">Mozart: Serenata notturna, 3 Divertimenti &amp;
