This recipe is one of my favorites, and in fact so\u00a0favorited\u00a0that it&#8217;s almost my only one.<\/p>\n<p>And the fillets looked great throughout, from\u00a0the moment I spied them inside the fisher&#8217;s bucket in the Union Square Greenmarket until they arrived on the table.<\/p>\n<p>I&#8217;m writing this the next day, and I can smell the heavenly aromas, fish and char, as I\u00a0revisit them in these\u00a0pictures.<\/p>\n<p>And look at those lines!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14169\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/Spanish_mackerel_grill-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14182\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/cherry_Alewife.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14183\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/Har_ver.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>six Spanish mackerel fillets (a total of about 15 ounces) from Blue Moon Fish,\u00a0washed, dried, brushed with olive oil, seasoned with sea salt and freshly-ground black pepper, pan grilled over high heat for 6 or 7 minutes, skin side down first, turned half way through, removed and completed on the plates with a salsa consisting of 7 ounces of gorgeous cherry tomatoes in various colors and sizes from Alewife Farm, halved,\u00a0 tossed with olive oil, a teaspoon or more of Sicilian salted capers (first rinsed and drained), much of one small red\u00a0<span class=\"s2\"><b><a href=\"http:\/\/www.specialtyproduce.com\/produce\/Calabrian_Chile_Peppers_12814.php\">Calabrian chili pepper<\/a>,\u00a0<\/b><\/span>half a tablespoon of juice from\u00a0a Whole Foods Market organic lemon,\u00a0sea salt, freshly-ground black pepper, and\u00a0a bit of spicy liquid, now slightly-fermented, that remained from a salsa prepared for <a href=\"http:\/\/food.hoggardwagner.org\/2017\/09\/07\/crab-cakes-with-a-spicy-salsa-arugula-radish-fennel-salad\/\">the meal the night before<\/a><\/li>\n<li><em>haricots verts <\/em>from Sycamore Farms, left whole,<em>\u00a0<\/em>blanched, drained and dried in the same pan over low-medium heat, shaking, then set aside in a bowl until the fish was ready to be grilled , at which time they were\u00a0reheated in a little oil inside a heavy well-seasoned cast iron pan, finished with sea salt, freshly-ground black pepper, and mixed with fennel buds from Mountain Sweet Berry Farm<\/li>\n<li>the wine was a French (C\u00f4tes de Provence) ros\u00e9,\u00a0<a href=\"http:\/\/www.garnetwine.com\/sku03946.html#anchor_moreinfo\">Ros\u00e9 Chateau des Muraires Seduction 2015<\/a>, from <a href=\"http:\/\/www.garnetwine.com\/\">Garnet Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1673210\">Mark Anfre&#8217;s &#8216;&#8230;auf&#8230;&#8217;<\/a>,\u00a0Sylvain Cambreling conducting the\u00a0SWR Baden-Baden and the Freiburg Symphony Orchestra<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It looks as good as it tasted.\u00a0Mackerel is a super fish, and if\u00a0the recipe chosen works with its singular qualities, there&#8217;s almost nothing better.
