I had time for neither last night.<\/p>\n<p>Since they shrink a bit after they&#8217;re cooked, and the size of my vegetable was modest, I don&#8217;t think\u00a0we looked like we were being\u00a0unreasonably overindulgent once the\u00a0fillets were on the plates.<\/p>\n<p>Also, they were so good, I had no regrets I\u00a0that I hadn&#8217;t skimped.<\/p>\n<p>The bass\u00a0just\u00a0out of the oven.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14082\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/sea_bass_in_the_pan.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The radicchio in the pot.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14083\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/radicchio_alliums_in_pot.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The bread on the cutting board.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-14084\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/09\/Bobolink_ciabatta.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>four\u00a0Black Sea Bass fillets from Pura Vida Seafood, totaling about 19 ounces, placed skin side down inside an enameled cast iron\u00a0baking\u00a0pan in which a teaspoon or so of olive oil had been poured, seasoned with salt and pepper, sprinkled with a mix of\u00a0parsley and\u00a0lovage from Keith&#8217;s Farm, sage from Phillips Farm, thyme from Stokes Farm, and a bit\u00a0of a\u00a0home-dried heatless, orange\/gold\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">Habanada pepper<\/a>\u00a0(purchased fresh from Norwich Meadows Farm last fall), the fish topped with a coating of homemade bread crumbs\u00a0and drizzled with 2 teaspoons of olive oil,\u00a0placed inside\u00a0a 425\u00ba oven for 8 or 10 minutes, finished on 2 plates with a squeeze of an organic lemon from Whole Foods Market and a light drizzle of olive oil<\/li>\n<li>one medium head of radicchio from Norwich Meadows Farm, sliced broadly, saut\u00e9ed until barely wilted inside a large, high-sided tin-lined copper pot with a little olive oil in which one medium Rocambole garlic clove from Keith&#8217;s Farm and 2 thin sliced French leeks from Mountain Sweet Berry Farm had already been heated until they had softened, seasoned with sea salt and freshly-ground black pepper, arranged on the plates and drizzled with a little olive oil<\/li>\n<li>slices of a terrific ciabatta, made with stone-ground organic unbleached wheat flower, organic corn flower, whole organic oats, salt, yeast, fromfrom\u00a0Bobolink Dairy &amp; Bakehouse at the Union Square Greenmarket<\/li>\n<li>the wine was a California (Clarksburg) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/richard-bruno-clarksburg-chenin-blanc-2016.htm\">Richard Bruno Clarksburg Chenin Blanc 2016,<\/a>\u00a0from\u00a0<a href=\"https:\/\/us.nakedwines.com\/\">Naked Wine<\/a>s<\/li>\n<li>the music was the album, &#8216;<a href=\"https:\/\/www.amazon.com\/Thrive-Routine-American-Contemporary-Ensemble\/dp\/B01MUC2VXV\">Thrive on Routine<\/a>&#8216;, with performances by the American Contemporary Music Ensemble,\u00a0including John Luther Adams&#8217;
