{"id":1334,"date":"2010-11-29T22:42:46","date_gmt":"2010-11-30T02:42:46","guid":{"rendered":"http:\/\/food.hoggardwagner.com\/?p=1334"},"modified":"2010-11-29T22:42:46","modified_gmt":"2010-11-30T02:42:46","slug":"pork-chops-roots-cavalo-nero","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=1334","title":{"rendered":"pork chops, roots, cavalo nero"},"content":{"rendered":"<p><strong>dinner, 11\/29\/10<\/strong><\/p>\n<p><strong><a href=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2010\/11\/pork_chops_roots_nero.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-1340\" title=\"pork_chops_roots_nero\" src=\"http:\/\/food2.hoggardwagner.org\/wp-content\/uploads\/2010\/11\/pork_chops_roots_nero.jpg\" alt=\"\" width=\"600\" height=\"400\" \/><\/a><\/strong><\/p>\n<p>I was in such a rush to get to the Greenmarket Wednesday before Thanksgiving that I forgot to bring my camera. \u00a0That means that I don&#8217;t have any notes for the vegetable&#8217;s farm sources (I normally take pictures of a stall&#8217;s sign to remember, once I get home,\u00a0where things came from). \u00a0I can only say that I&#8217;m grateful for our area&#8217;s delayed full frost, since there was still a wonderful bounty of just about everything late harvest-y.<\/p>\n<p>The roots gathered for this meal were terrific, the <a href=\"http:\/\/en.wikipedia.org\/wiki\/Sparkling_wine\">Sekt<\/a> a delight, and the beautifully-cut (a rich layer of fat), very juicy <a href=\"http:\/\/www.flyingpigsfarm.com\/\">Flying Pigs Farm<\/a> pork chops were phenomenal!<\/p>\n<ul>\n<li>grissini (<a href=\"http:\/\/www.robertoalimentare.com\/eng\/catalogo_visua.asp?id=29&amp;idcat=54\">Roberto<\/a>)<\/li>\n<li>wine: \u00a0German sparkling, from the Mosel (Ruwer), <a href=\"http:\/\/www.snooth.com\/talk\/topic\/christoph-von-nell-riesling-halbtrocken-deutscher-sekt-2002\/\">Eleonora Riesling Halbtrocken 2002<\/a> Kaseler Dominikanerberg (Kasel im Ruwertal) produced by <a href=\"http:\/\/www.weingut-von-nell.de\/home.htm\">Christoph von Nell<\/a>, from a private tasting of wines distributed by <a href=\"http:\/\/www.moselwinemerchant.com\/\">Mosel Wine Merchant<\/a><\/li>\n<li>pork chops from from the Flying Pigs\u00a0people at the Greenmarket, seared, then oven-roasted with lemon;\u00a0 accompanied by slices of roasted parsnips and celery root roasted in a hot oven and finished with chopped parsley;
