from Schaller &amp; Weber, allowed to sit, still in their casings, for 20 minutes inside a covered pan of water that had been brought to the boiling point and the flame then extinguished, removed from the water, their casings removed, stirred with a\u00a0couple tablespoons of butter, an &#8216;expression sweet&#8217; yellow onion from Norwich Meadows Farm, and one roughly-chopped Honey Crisp apple from Locust Grove Orchards inside a heavy tin-lined copper pan with high sides, served with a dollop of Italian (Asiago) Lingonberry Jam (in Germany it would be &#8216;<a href=\"https:\/\/de.wikipedia.org\/wiki\/Preiselbeere\"><em>Preiselbeeren<\/em><\/a>&#8216;)<\/li>\n<li>eight small red \u2018new potatoes\u2019 from Norwich Meadows Farm, boiled in well-salted water, drained,\u00a0dried in the still-warm vintage glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>, rolled in a little \u2018<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u2018, seasoned with sea salt and freshly-ground Tellicherry pepper, sprinkled with chopped\u00a0parsley from Phillip&#8217;s Farm<\/li>\n<li>one 16-ounce\u00a0glass jar of sauerkraut (simply cabbage and salt) from Millport Dairy Farm, drained and very well-rinsed in several changes of cold water, drained again and placed inside a heavy, high-sided, tin-lined copper saut\u00e9 pan\u00a0with one chopped red onion and one yellow, both from Phillips Farm (I think the red onion may account for the pink blush in the sauerkraut), another\u00a0cored and chopped Honey Crisp apple from Locust Grove Orchards,\u00a08 or 9 whole juniper\u00a0berries and about the same number of Tellicherry peppercorns, a little salt, one\u00a0large Sicilian bay leaf from Buon Italia,\u00a0enough water to almost cover the sauerkraut, all brought to\u00a0a boil, simmered, covered, for less than half an hour over a low flame, stirring occasionally,\u00a0and then uncovered for 20 or 30 minutes more<\/li>\n<li>the wine was a German (Mosel) white, <a href=\"http:\/\/www.weygandtmetzler.com\/weingut-axel-pauly\">Weingut Axel Pauly Trinkfluss 2014<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=176942\">Mozart&#8217;s &#8216;Don Giovanni&#8217;, Ren\u00e9 Jacobs conducting the\u00a0Freiburg Baroque Orchestra and the Berlin RIAS Chamber Chorus<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I can&#8217;t account for the abrupt contrast between\u00a0the dinner the day before and this one enjoyed on Sunday, other than\u00a0with the fact\u00a0that\u00a0everything else I had on tap for an entr\u00e9e on this warm and humid evening would have involved the use of the oven. one 12-ounce pac\u0142age (2 links) of &#8216;German Brand Blood Pudding&#8217;
