{"id":12910,"date":"2017-05-17T19:40:29","date_gmt":"2017-05-17T19:40:29","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=12910"},"modified":"2017-05-17T19:40:29","modified_gmt":"2017-05-17T19:40:29","slug":"cacio-e-pepe-habanada-2-foraged-greens-tomato-cheese","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=12910","title":{"rendered":"cacio e pepe, habanada, 2 foraged greens, tomato, cheese"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12911\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/05\/cacio_e_pepe_garlic_mustard.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I love the small challenge of building a meal around pasta, and it&#8217;s particularly easy when I can start with a filled pasta from a good local source.<\/p>\n<p>Regional specialties, new inventions, or just out-of-the-ordinary ones are always good.<\/p>\n<ul>\n<li>\u2018caccio e pepe\u2019 ravioli from\u00a0<a href=\"http:\/\/www.pastaioluca.com\/\">Luca Donofrio<\/a>\u2018s fresh pasta stand inside Eataly Market,\u00a0finished in a pan with olive oil,\u00a0generous amounts of freshly-ground Tellicherry pepper, part of one dried dark habanada pepper, crushed, some of the reserved pasta water added and the sauce emulsified over low heat, then 6 or 8 roughly chopped ramp leaves from Berried Treasures added, gently tossed with the pasta, the mix\u00a0placed in two shallow bowls, a couple tablespoons of the juices remaining\u00a0from a\u00a0tomato salsa prepared for\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2017\/05\/13\/crab-cakes-with-a-spicy-salsa-arugula-potatoes-and-leeks\/\">a meal we enjoyed\u00a0a few days earlier<\/a>,\u00a0spooned over it, some roughly-chopped\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Alliaria_petiolata\">garlic mustard<\/a>\u00a0[Brit: \u2018Jack-by-the-hedge\u2019], both flowers and the smaller, more tender leaves, from Windfall Farms, scattered on the top, followed by a bit of olive oil and slivers of\u00a0a Parmigiano-Reggiano Vache Rosse from Eataly<\/li>\n<li>\u00a0the wine was an Italian (Marche) white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/shop-by\/on-sale\/stefano-antonucci-pignocco-verdicchio-dei-castelli-di-jesi-2015#.WRu_GIEpCaM\">Stefano Antonucci Pignocco Verdicchio dei Castelli di Jesi 2015<\/a>, from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<li>the music was <a href=\"https:\/\/www.discogs.com\/Various-Meet-The-Composer-Joonas-Kokkonen\/release\/8013641\">the\u00a0String Quarter No. 1, Piano Trio, and Sinfonia Da Camera of Joonas Kokkonen<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I love the small challenge of building a meal around pasta, and it&#8217;s particularly easy when I can start with a filled pasta from a good local source.
