We had expected to be out until very late on Friday night, so\u00a0I had not purchased anything that could be used for an entr\u00e9e, or even a fresh green vegetable. Still, when our plans changed at the last minute, meaning now we would be home, I was able to recover the field, thanks to electrical refrigeration.<\/p>\n<p>The potatoes and the leeks were both a little long in the tooth, but they cleaned up nice, and neither had lost any of the goodness they&#8217;d originally promised.<\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), defrosted earlier in the evening, heated inside a heavy oval enameled cast iron\u00a0pan, 3\u00a0to 4\u00a0minutes to each side,\u00a0served on a\u00a0salsa\u00a0composed of 8\u00a0chopped Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods,c sea salt, freshly-ground Tellicherry pepper, a bit of a powdered seasoning blend with the proprietary name,\u00a0<a href=\"http:\/\/www.nyshuk.com\/shop\/lekama\">L\u2019eKama<\/a>, chopped thyme from Stokes Farm, 2 small\u00a0chopped scallions from Tamarack Hollow Farm, both\u00a0crab cakes and salsa finished with a sprinkling of chopped\u00a0green stems from the scallion<\/li>\n<li>a small handful of baby arugula from Lani&#8217;s Farm, drizzled with a good olive oil, Alce Nero DOP &#8216;Terra di Bari Bitonto&#8217;, from Eataly<\/li>\n<li>eight small red potatoes from Phillips Farm, boiled in well-salted water, drained, dried in the still-warm vintage Pyrex glass\u00a0<a href=\"http:\/\/www.ebay.com\/itm\/VIntage-Pyrex-6-Piece-Blue-Tint-Flameware-Stovetop-Pans-Removeable-Handles-\/111577304599\">pot<\/a>\u00a0in which they were cooked, rolled in a little olive oil,\u00a0seasoned with sea salt and freshly-ground Tellicherry pepper, then introduced into a heavy tin-lined copper pan in which 3 leeks from Phillips Farm, cut into half-inch segments, had been saut\u00e9ed in olive oil until tender, the mix tossed with some chopped parsley from\u00a0Lani&#8217;s Farm<\/li>\n<li>the wine was a French (Loire) white, <a href=\"http:\/\/www.chelseawinevault.com\/chateau-la-berriere-muscadet-cotes-de-grandlieu-sur-lie-2015\">Ch\u00e2teau la Berri\u00e8re Muscadet C\u00f4tes de Grandlieu Sur Lie 2015<\/a>, from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=2251163\">Viktor Ullmann&#8217;s 1940 Concerto for Piano, composed in Prague, with soloist\u00a0<span class=\"piecedata\">Moritz Ernst,\u00a0Gabriel Feltz conducting the Dortmund Philharmonic Orchestra, <\/span>and his 1944 Piano Sonata, composed in Terez\u00edn, with Moritz Ernst the soloist in that piece\u00a0as well<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>This meal is mostly a lesson in improvisation, born of the need to scour both a freezer and a refrigerator to come up with a meal almost at the last moment.
