{"id":12791,"date":"2017-05-09T18:03:10","date_gmt":"2017-05-09T18:03:10","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=12791"},"modified":"2017-05-09T18:03:10","modified_gmt":"2017-05-09T18:03:10","slug":"skate-wing-ramps-lemon-lovage-parsley-rainbow-chard","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=12791","title":{"rendered":"skate wing, ramps, lemon, lovage, parsley; rainbow chard"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12794\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/05\/skate_wings_rainbow_chard.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I think this may have been the first time I&#8217;ve been able to combine 2 wild favorites of ours, skate wings from local waters and New York (Delaware County)\u00a0ramps, in a single dish.<\/p>\n<p>Splendid.<\/p>\n<p>Oh, and the polenta flour coating on the skates was also local (Clinton Corners).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12800\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/05\/ramps-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I already had the ramps (they can be kept for a surprising number of days if carefully packaged in an unsealed plastic bag in the refrigerator\u00a0with the bulbs wrapped in a damp paper towel).<\/p>\n<p>While still in the Greenmarket on Monday, I decided rainbow chard would make a good compliment to the skate with the ramps, for its trace of\u00a0sweetness, and slight bitterness, and for the color it would add to the plate.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12801\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/05\/rainbow_chard-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The red amaranth with the skate? I took a chance by adding a few sprigs, risking overkill, but it worked out fine.<\/p>\n<p>And that color!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12802\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/05\/red_amaranth-1.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>four 4-ounce skate wings from\u00a0P.E. &amp; D.D. Seafood,\u00a0coated all over with a <em>local<\/em> coarse polenta (<a href=\"https:\/\/wildhivefarm.com\/product\/stone-ground-polenta\/\">&#8216;Stone-Ground Polenta&#8217; from Wild Hive Farm Community Grain Project<\/a>) seasoned with salt and pepper, saut\u00e9ed in olive oil and a bit of butter for 3 minutes or so on each side inside a heavy enameled cast iron oven pan\u00a0(the only difficult part of this recipe is turning them over without breaking them up), removed to the plates and kept warm while about 1 1\/2 tablespoons of butter and half a dozen ramps\u00a0(leaves removed), sliced a bit, from Berried Treasures, were introduced into the pan and stirred over a now-lowered flame, only to allow the alliums to sweat a bit before the heat was\u00a0turned off altogether and another 1 1\/2 tablespoons of butter added to the pan along with the juice from half of a local sweet lemon from Fantastic Gardens of Long Island, some chopped lovage from Windfall Farms and a bit of chopped parsley from Lani&#8217;s Farm, and half a dozen of the ramp leaves which had been set aside, roughly chopped, everything stirred for a bit to blend together and make a proper sauce to be divided among the four wings, which were garnished with\u00a0a\u00a0scattering of\u00a0\u2018micro red amaranth from Windfall Farms<\/li>\n<li>a bunch of rainbow chard from Norwich Meadows Farm,\u00a0wilted in a little olive oil in which 2 halved garlic cloves from Lucky Dog Organic Farm had been heated, along with a small amount of crushed dried Sicilian <em>pepperoncino<\/em> from Buon Italia, finished with a squeeze of juice from the same local lemon used on the\u00a0skate<\/li>\n<li>the wine was a California (Sonoma) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/jacqueline-bahue-carte-blanche-sauvignon-blanc-sonoma-valley-2016.htm?cid=USA\">Jacqueline Bahue Carte Blanche Sauvignon Blanc Sonoma Valley 2016<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li>the music was <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=22851\">Franz\u00a0Schmidt, Symphonies\u00a0No. 1 and 2,\u00a0\u00a0Neeme J\u00e4rvi conducting, respectively, the Detroit Symphony Orchestra and the Chicago Symphony Orchestra <\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I think this may have been the first time I&#8217;ve been able to combine 2 wild favorites of ours, skate wings from local waters and New York (Delaware County)\u00a0ramps, in a single dish.
