{"id":12636,"date":"2017-04-26T05:26:17","date_gmt":"2017-04-26T05:26:17","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=12636"},"modified":"2017-04-26T05:26:17","modified_gmt":"2017-04-26T05:26:17","slug":"pan-fried-spaghetto-with-ramps-mint-chilis-and-parmesan","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=12636","title":{"rendered":"pan-fried spaghetto with ramps, mint, chilis, and parmesan"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12639\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/spaghetto_ramps_mint_parmesan.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I had a full bunch of ramps, purchased at the Greenmarket on Saturday, and I knew I could get more the next day, so I looked around for a pasta recipe which would not stint on these terrific wild spring\u00a0alliums.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12641\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/ramps2.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I went on line an hour before starting dinner, and I quickly found, &#8216;<a href=\"http:\/\/www.thekitchn.com\/spring-recipe-spaghetti-pan-fried-with-ramps-mint-170317\">Spaghetti Pan-Fried with Ramps &amp; Mint<\/a>&#8216;.<\/p>\n<p>The ingredients were few, the process pretty simple, and\u00a0I was astounded at how delicious &#8211; and complex &#8211; this pasta\u00a0turned out to be. Some of the credit should probably go to my adding part one pepperoncino, but most of it was surely the formula itself and the quality of the ingredients.<\/p>\n<p>The dish\u00a0was VERY good, and it got even better over time and as it moved to room temperature. Lesson: do not eat in haste, and do not insist on hot food.<\/p>\n<p>Otherwise, the recipe itself is in the link in the second paragraph above, and the several ingredients I used on this night are:<\/p>\n<ul>\n<li>eight\u00a0ounces of a Neapolitan artisanal pasta, Afeltra <em>spaghetto<\/em>,\u00a0from Eataly; one bunch of ramps ramps from Violet Hill Farm; a California (Sonoma) white, <a href=\"https:\/\/us.nakedwines.com\/wines\/rox-scott-peterson-sonoma-coast-chardonnay-2015.htm\">ROX Scott Peterson Sonoma Coast Chardonnay 2015<\/a> from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a>;\u00a0half of a\u00a0crushed dried Sicilian pepperoncino from Buon Italia; and Parmigiano-Reggiano Vache Rosse from Eataly,\u00a0both grated and slivered<\/li>\n<li>the wine was a California (Clarksburg) white, <a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-pinot-grigio-2015.htm?region=NY\">Karen Birmingham 2015 Pinot Grigio<\/a>, also from <a href=\"https:\/\/us.nakedwines.com\/wines\/karen-birmingham-pinot-grigio-2015.htm?region=NY\">Naked Wines<\/a><\/li>\n<li>the music was two major works by <a href=\"http:\/\/www.naxos.com\/catalogue\/item.asp?item_code=ODE1129-2\">Joonas\u00a0Kokkonen, his\u00a0Symphonies Nos. 1 and 2, performed by the Finnish Radio Symphony conducted by Sakari Oramo<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I had a full bunch of ramps, purchased at the Greenmarket on Saturday, and I knew I could get more the next day, so I looked around for a pasta recipe which would not stint on these terrific wild spring\u00a0alliums.
