In fact, I hadn&#8217;t even begun.<\/p>\n<p>In the past I would have panicked before they arrived, or after, or more likely, both before and after. This time however I was completely relaxed, and because I didn&#8217;t want to miss any of the conversation, I even welcomed\u00a0everyone into the breakfast room area next\u00a0to the kitchen while I was working on the meal.<\/p>\n<p>I was shocked that none of this fazed\u00a0me, and that I didn&#8217;t miss a step.<\/p>\n<p>Practice works.<\/p>\n<p>I said at the beginning that there were 4 plates, but there were also\u00a04 courses, plus\u00a0our standing\/standup starter of Italian grissini and\u00a0sparkling wine.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12465\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/grissini.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li><strong><a href=\"http:\/\/www.mariofongo.com\/ita\/confezioni-speciali\/grissini-al-riso-nero\">Mario Fongo \u2018Il Panate\u2019, Grissini con farina di riso nero \u2018Artemide\u2019<\/a><\/strong>, from\u00a0Eataly<\/li>\n<li>the wine was a California (North Coast) sparkling white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/eponina-brut-north-coast-nv.htm\">Eponina Brut North Coast NV<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12463\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/bresaola_arugula.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>seven\u00a0ounces of a delicious Uruguayan bresaola from Eataly, arranged on 4\u00a0plates with sprigs of slightly-flowering arugula from Bodhitree Farm, both drizzled with a good Campania olive oil (Lamparelli O.R.O.)\u00a0and some of the juice of\u00a0a large local lemon from Fantastic Gardens of Long Island, the greens seasoned with Maldon salt and freshly-ground pepper<\/li>\n<li>slices of a &#8216;baguette\u00a0c\u00e9r\u00e9ales&#8217; (golden and brown flax seeds, sesame seeds, poppy seeds, millet seeds)\u00a0from Eric Kayser [not pictured]<\/li>\n<li>the wine was a New York (Long Island) ros\u00e9,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/wolffer-estate-rose-long-island-2016-local#.WO8DTYEpCaM\">W\u00f6lffer Estate Ros\u00e9 Long Island 2016<\/a>, from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<\/ul>\n<p>The main course was more successful than I could have hoped, and it also looked pretty good.<\/p>\n<ul>\n<li>over one an a half pounds of sea scallops from Blue Moon Fish Company,\u00a0rinsed, dried, slit horizontally with a very sharp knife almost all of the way through, stuffed with\u00a0a mixture of a couple dozen small leaves\u00a0from a basil plant purchased from Whole Foods,\u00a0one medium-size clove of garlic from John D, Madura Farm, sea salt,\u00a0and freshly-ground Tellicherry pepper, all chopped <em>together<\/em> very finely, the mix removed to a small bowl where just enough\u00a0olive oil was added to form a\u00a0paste, the stuffed scallops\u00a0then\u00a0rolled around on a plate with a little more\u00a0olive oil, drained, then pan cooked\u00a0on a 2-burner cast iron grill pan for about 2 minutes on each side, removed to 4\u00a0plates, garnished with micro red amaranth from Windfall Farms, and drizzled with more juice from the same large local lemon used in the previous course<\/li>\n<li>twelve Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole\u00a0Foods, halved, gently heated inside a heavy tin-lined copper pan with the stems of some wild garlic from Lanis Farm, seasoned with sea salt and freshly-ground Tellicherry pepper, arranged on the plates and garnished with micro bronze fennel from Two Guys from Woodbridge<\/li>\n<li>purple frizzy mustard greens from Bodhitree Farm, wilted inside a large enameled cast iron pot in a little olive oil in which 2 cloves of \u00a0garlic from John D. Madura Farm, halved, had been allowed to sweat, seasoned with salt, pepper, and a very small amount of\u00a0crushed dried Sicilian <em>pepperoncino<\/em> from Buon Italia, the greens finished on the plates with a drizzle of olive oil<\/li>\n<li>the wine was an Oregon (Willamette Valley) white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/white-wine\/l-umami-pinot-gris-willamette-valley-2015#.WO8DhYEpCaM\">L&#8217;Umami Pinot Gris Willamette Valley 2015<\/a>, from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12466\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/cheeses.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>small samples of 5 different\u00a0cheeses, all from Consider Bardwell Farm [l to R:\u00a0&#8216;Manchester\u2019 goat cheese; &#8216;Slybro&#8217; goat cheese; &#8216;Goat Blue&#8217; cheese;\u00a0&#8216;Rupert&#8217; cow cheese; and\u00a0&#8216;Barden Blue&#8217; cow cheese]<\/li>\n<li>halves of 2 Honey Crisp apples from\u00a0Locust Grove Orchards<\/li>\n<li>toasted slices from the same\u00a0Eric Kayser &#8216;baguette\u00a0c\u00e9r\u00e9ales&#8217; which had accompanied the bresaola<\/li>\n<li>the wine was more of the\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/white-wine\/l-umami-pinot-gris-willamette-valley-2015#.WO8DhYEpCaM\">Oregon Willamette Valley\u00a0Pinot Gris<\/a><\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12467\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/gelato_vanilla.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>scoops of a hand-packed vanilla gelato, made in-house, from\u00a0Eataly, sprinkled with chopped candied ginger from Whole Foods Market<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>There were 4\u00a0of these plates.
