{"id":12389,"date":"2017-04-06T01:38:58","date_gmt":"2017-04-06T01:38:58","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=12389"},"modified":"2017-04-06T01:38:58","modified_gmt":"2017-04-06T01:38:58","slug":"prosciutto-spaghetto-garlic-walnuts-chili-anchovies","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=12389","title":{"rendered":"prosciutto; spaghetto, garlic, walnuts, chili, anchovies"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12390\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/prosciuto.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>An <em>antipasto<\/em> doesn&#8217;t get much more simple than this, and the <em>primi<\/em> was\u00a0only a little more elaborate.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12391\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/04\/walnut_anchovy_spaghetto.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Both pretty Italian, they\u00a0seemed made for each other on a cool evening.<\/p>\n<p>The <em>salume<\/em> was actually American (although not local), and, as always with this product, really good! The\u00a0recipe (which <em>was<\/em> local) that I used for the pasta was also, technically, American: <a href=\"https:\/\/cooking.nytimes.com\/recipes\/8358-linguine-with-walnuts-and-anchovies\">Mark Bittman&#8217;s &#8216;Linguine With Walnuts And Anchovies&#8217;<\/a>. My only alterations were these:\u00a0\u00a0using\u00a0a pasta that I already had; introducing\u00a0a bit of a heatless dark dried pepper to the sauce; and garnishing it with the last of a wonderful &#8216;micro &#8216;green&#8217; that still remained in the refrigerator yesterday.<\/p>\n<ul>\n<li>three ounces of <a href=\"http:\/\/laquercia.us\/cuts_ham_prosciutto_americano\">La Quercia Prosciutto Americano<\/a>\u00a0from Whole Foods, drizzled with a \u00a0little\u00a0good Campania olive oil (Lamparelli O.R.O.)<\/li>\n<li>served with slices of a <a href=\"http:\/\/www.biencuit.com\/\">Bien Cuit<\/a> baguette from <a href=\"https:\/\/foragersmarket.com\">Foragers Market<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the pasta was Afeltra <em>spaghetto<\/em>,\u00a0from Eataly; the shelled walnuts from Whole Foods; the garlic was from John D. Madura Farms; the red pepper was less than half of one\u00a0dried\u00a0<a href=\"http:\/\/www.sardissimo.com\/\">Itria-Sirissi<\/a>\u00a0chili,\u00a0<em><a href=\"http:\/\/www.zafferanodisardegna.it\/peperoncino.htm#PEPERONCINO INTERO ITRIA\">peperoncino di Sardegna intero<\/a><\/em>\u00a0from Buon Italia; the heatless pepper was a home-dried, dark mahogany in color <a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">Habanada<\/a>\u00a0(which had been purchased fresh from Norwich Meadows Farm last fall); the 4 large <a href=\"http:\/\/www.agostinorecca.com\/en\/alicisalate800g-scatola.html\">Agostino Recca salted Sicilian anchovies<\/a>, which were rinsed well and filleted, were from <a href=\"http:\/\/www.buonitalia.com\/\">Buon Italia<\/a>, in the Chelsea Market; and the garnish was\u00a0micro red amaranth\u00a0from Windfall Farms<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li>the wine throughout was a southern Italian (Campania) white,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/feudi-di-san-gregorio\/wines\/falanghina-2014\">Feudi Di San Gregorio Falanghina 2014<\/a><\/li>\n<li>the music was also Italian,\u00a0or perhaps more precisely, Sicilian, composed by Palermo-born\u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Salvatore_Sciarrino\">Salvatore Sciarrino<\/a>; there were <a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=2238941#details\">2\u00a0works: &#8216;<em>Un&#8217; immagine d&#8217;Arpocrate<\/em>&#8216;, with pianist Tamara Stefanovich,\u00a0Susanna M\u00e4lkki conducting the Bavarian Radio Symphony Orchestra, and Florian Helgath directing Chorwerk Ruhr; and\u00a0&#8216;<em>Giono velato presso il lago nero<\/em>&#8216;, with violinist Carolin Widmann, Jonathan Nott conducting the Bavarian Radio Symphony Orchestra<\/a><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>An antipasto doesn&#8217;t get much more simple than this, and the primi was\u00a0only a little more elaborate.
