They\u00a0were irresistible, so I decided they would join the shellfish\u00a0for dinner.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12248\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/golden_oyster_mushrooms.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I already had some beautiful purple <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mizuna\">mizuna<\/a> at home\u00a0that I had picked up on Friday from some of my\u00a0favorite farmers, just returned to the Greenmarket after being away for the winter.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12249\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/purple_mizuna3.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>And so the meal came together, the work itself being little more complicated.<\/p>\n<ul>\n<li>fourteen sea scallops (12 ounces) from P.E. &amp; D. D. Seafood, rinsed, dried thoroughly, seasoned with sea salt and freshly-ground black pepper, briefly pan-grilledy (90 seconds on each side), finished with a squeeze of juice from\u00a0a sweet local lemon grown by\u00a0<a href=\"http:\/\/fantasticgardensofli.com\/\">Fantastic Gardens of Long Island<\/a>\u00a0and a drizzle of olive oil, placed on top of a bed of golden oyster mushrooms (8 ounces from Blue Oyster Cultivation) which had just been prepared, starting with roughly slicing the 2 &#8216;heads&#8217; and saut\u00e9eing them\u00a0inside a large enameled cast iron pan in a tablespoon of butter for about 4 minutes, one medium chopped finely-chopped shallot from Norwich Meadows Farm and one finely-chopped garlic clove from John D. Madura Farm added and stirred with the mushrooms for 2 minutes, a bit of crushed dried habanada pepper stirred in, almost a quarter cup of a dry (fino) sherry poured in and simmered, stirring,\u00a0for another minute or two, the pan removed entirely from the heat and a tablespoon of butter, divided into small pieces, added and\u00a0stirred until it had melted into its contents, the scallops sprinkled with a little very colorful &#8216;Bull&#8217;s Blood Beet&#8217; from\u00a0Windfall Farms after they had been arranged on the mushrooms<\/li>\n<li>purple mizuna from Bodhitree Farm, wilted in a little olive oil in which one\u00a0bruised and halved garlic clove from John D. Madura Farm had first been allowed to sweat and begin to color, the greens seasoned with sea salt, freshly-ground Tellicherry pepper, a very small amount of\u00a0crushed dried crushed dried Sicilian <em>pepperoncino<\/em> from Buon Italia, arranged on the plates and a little more olive oil drizzled on top<\/li>\n<li>the wine was a French (Loire) white,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/jerome-choblet\/wines\/fief-du-chant-baron-vieilles-vignes-muscadet-cotes-de-grandlieu-sur-lie-2015\">Jerome Choblet Fief Du Chant Baron Vieilles Vignes Muscadet Cotes De Grandlieu Sur Lie 2015<\/a>, from\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea wine vault<\/a><\/li>\n<li>the music was the magnificent 1846 piece which\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=8093\">Hector Berlioz&#8217; called a\u00a0&#8220;l\u00e9gende dramatique&#8221;, &#8216;La Damnation De\u00a0Faust&#8217;,\u00a0Myung-Whun Chung directing the\u00a0Philharmonia Orchestra, the Philharmonia Chorus, and the Eton College Boys&#8217; Choir, with soloists\u00a0Keith Lewis, Anne Sofie von Otter, Bryn Terfel, Victor von Halem, and David Nicklass<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>I had just picked up\u00a0the scallops when I spotted the mushrooms.
