{"id":12181,"date":"2017-03-24T04:08:46","date_gmt":"2017-03-24T04:08:46","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=12181"},"modified":"2017-03-24T04:08:46","modified_gmt":"2017-03-24T04:08:46","slug":"sea-perch-wild-garlic-habanada-anchovy-radishes-rabe","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=12181","title":{"rendered":"sea perch, wild garlic, habanada, anchovy; radishes; rabe"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12182\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/sea_perch_radish_rabe.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>With its <a href=\"http:\/\/food.hoggardwagner.org\/2016\/01\/16\/broiled-sea-perch-with-anchovy-kale-tomato-compote\/\">gorgeous pink\/red skin<\/a>, I find it difficult to avoid bringing Sea perch home whenever I see it at a\u00a0fish seller&#8217;s stall in Union Square, especially since it has so many other virtues, beginning with excellent\u00a0flavor and texture, and including\u00a0ease of preparation, at least as I have come to know it.<\/p>\n<p>The radishes had come from the Greenmarket a full 2 weeks before and still tasted great. They \u00a0are <em>roots<\/em>, and apparently, not knowing when I would remember they were there, I had wrapped them carefully enough to extend their freshness.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12184\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/Frenc_breakfast_radishes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>The green vegetable which we enjoyed, described by the people who raised and sold it in the Greenmarket on Monday as &#8216;overwintered broccoli rabe&#8217;, is actually, and very surprisingly, a seasonal vegetable, at least in this new age of <a href=\"http:\/\/store.rimolgreenhouses.com\/High_Tunnels_s\/1824.htm?gclid=CLOGre7WzMkCFQsjHwodj2sPkA\">high tunnels<\/a> and artisanal farming\u00a0to supply <a href=\"http:\/\/food.hoggardwagner.org\/\">fussy city people<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12185\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/kale_overwintered.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>four 4-ounce sea perch fillets from American Seafood Company,\u00a0brushed with olive oil and some chopped wild\u00a0garlic from Lani\u2019s Farm, a bit of crushed dried orange-golden <a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">habanada pepper<\/a>, seasoned with salt and freshly-ground black pepper, then broiled 4 inches from the flames for about 4 minutes until the skin was\u00a0crisp and the fish cooked through, sauced with a bit of olive oil in which one large\u00a0rinsed, filleted salted anchovy from Buon Italia had been gently\u00a0heated until it\u00a0had fallen apart, the fish finished on the 2 plates with a drizzle of sweet local lemon from Fantastic Gardens of Long Island, and a small number of cut chives from Phillips Farm<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12183\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/radishes_about_to_go_in.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>here an image of the radishes about to go into the oven<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>two\u00a0bunches of breakfast radishes from Eckerton Hill Farm, scrubbed, trimmed,\u00a0tossed with olive oil, salt, freshly-ground black pepper, and branches of thyme from Eckerton Hill Farm, roasted at 375\u00ba for about 20 minutes on a medium-size Pampered Chef pan with, garnished on the plates with a little red wasabi micro radish from two Guys from Woodbridge<\/li>\n<li>&#8216;overwintered broccoli rabe&#8217; from <a href=\"http:\/\/lanisfarm.blogspot.com\/\">Lani&#8217;s Farm<\/a>,\u00a0wilted with olive oil in which two lightly-crushed and halved garlic cloves John D. Madura Farm had been heated until beginning to color, finished with salt, freshly-ground pepper, a small amount of crushed dried chili (<em>peperoncino Calabresi secchi<\/em> from Buon Italia), and drizzled with more olive oil<\/li>\n<li>the wine was a California (Napa) white,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/scott-peterson-s-p--drummer-napa-chardonnay-2015.htm?cid=USA\">Scott Peterson S.P.
