An unfamiliar treat on most tables, and, even if we&#8217;ve been enjoying them for years (beginning long before this blog), not familiar enough on ours. This is\u00a0especially how we both feel after this meal.<\/p>\n<p>The chops and the vegetables were local, the goat from west central Vermont, the Japanese sweet potatoes from northwest New Jersey&#8217;s\u00a0Kittatinny Valley, and the kale from the Catskills, northwest of us.<\/p>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12080\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/Japanese_sweet_potatoes.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12083\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/kale-1.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>four loin goat chops, each weighing less than 4 ounces, from Consider Bardwell Farm,\u00a0first marinated for about half an hour in olive oil, 2 small sliced cloves of garlic from Trader Joe&#8217;s, black pepper, <a href=\"http:\/\/en.wikipedia.org\/wiki\/Juniper_berries\">juniper berries<\/a>, rosemary from Eataly,\u00a0one medium crushed fresh\u00a0<a href=\"http:\/\/en.wikipedia.org\/wiki\/Bay_leaf\">bay leaf<\/a>\u00a0from Westside Market, and a little zest from a local sweet lemon from Fantastic Gardens of Long Island, then pan-grilled for a few minutes, turning\u00a03 times, seasoned with salt and freshly-ground pepper after the first time, finished with oil, juice from the same lemon, and lovage from Two Guys from Woodbridge<\/li>\n<li>two Japanese sweet potatoes from Race Farm, scrubbed, cut, unpeeled, into half-inch discs, tossed with a little olive oil inside a bowl with salt, pepper, 2 thickly-sliced small garlic cloves from John D. Madura Farm, some small fresh sage leaves from Eataly,\u00a0and a piece of crushed home-dried dark\u00a0<a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">Habanada pepper<\/a>, then arranged on a medium\u00a0well-seasoned\u00a0<a href=\"http:\/\/www.pamperedchef.com\/shop\/Stoneware\/Stoneware+Large+Bar+Pan\/1445\">Pampered Chef<\/a>\u00a0unglazed ceramic oven pan, placing each of the garlic pieces on the top of a potato slice (to avoid burning), roasted for about 35 minutes, finished with some cut chives from Phillips Farm<\/li>\n<li>winter kale from Lucky Dog Organic Farm, washed, drained, briefly saut\u00e9ed in olive oil in which 2\u00a0bruised and halved garlic cloves from John D. Madura Farm had first been allowed to sweat and begin to color, the greens seasoned with salt, pepper, a very small amount of\u00a0crushed dried <em>Itria-Sirissi<\/em> chili (<em>peperoncino di Sardegna intero<\/em>) from <em>Buon Italia<\/em>, and\u00a0and a little more olive oil<\/li>\n<li>the wine was a California (Lodi) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/f-stephen-millier-angels-reserve-shiraz-2015.htm\">F. Stephen Millier Angels Reserve Shiraz 2015<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=12948\">Schumann&#8217;s &#8216;Scenes from Goethe&#8217;s Faust&#8217;,\u00a0the\u00a0Berlin Philharmonic Orchestra and the T\u00f6lz Boys Choir conducted by Claudio Abbado, with\u00a0Bryn Terfel, Karita Mattila, Jan-Hendrik Rootering, Barbara Bonney, Endrik Wottrich, Brigitte Poschner-Klebel, Susan Graham, Harry Peeters, Iris Vermillion, and Hans-Peter Blochwitz<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Goat chops.
