{"id":11998,"date":"2017-03-11T02:12:46","date_gmt":"2017-03-11T02:12:46","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11998"},"modified":"2017-03-11T02:12:46","modified_gmt":"2017-03-11T02:12:46","slug":"steak-potato-roasted-with-garlic-habanada-rainbow-chard","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11998","title":{"rendered":"steak; potato roasted with garlic, habanada; rainbow chard"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11999\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/steak_and_potatoes.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Steak and potatoes.<\/p>\n<p>Local beef and potatoes might be expected in a winter farmer&#8217;s\u00a0market, but there was also\u00a0chard &#8211; from eastern Pennsylvania &#8211; and this was early March.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-12006\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/rainbow_chard.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>one thick grass-fed New York strip steak (15.5 ounces) purchased from\u00a0<a href=\"http:\/\/www.theepochtimes.com\/n3\/679101-this-is-new-york-john-stoltzfoos-an-amish-farmer-in-the-urban-jungle\/\">John Stoltzfoos<\/a> at his family\u2019s Millport Dairy Farm stall in the Union Square Greenmarket, brought to room temperature, dried, grilled inside a small cast iron closely-ribbed pan (seasoned on both sides only after each had been seared) over a medium-high flame, until medium rare, cut into 2 servings, each sprinkled with a little juice from a\u00a0local lemon grown by Fantastic Gardens of Long Island, followed by a little chopped rosemary from Eataly and a drizzle of olive oil, the steak allowed to rest a very few minutes before being served<\/li>\n<li>one\u00a0Carola potato (it was the only one left) from Max Creek\u00a0Hatchery, scrubbed, left unpeeled, cut into 8 wedges which were tossed in a small bowl with a little olive oil, one unpeeled garlic clove from John D. Madura Farm, salt, pepper, and a section of a\u00a0home-dried heatless, orange\/gold <a href=\"http:\/\/food.hoggardwagner.org\/2017\/02\/28\/the-habanada-pepper-fresh-and-dried-two-ways\/\">Habanada pepper<\/a> (purchased fresh from Norwich Meadows Farm last fall), arranged on a\u00a0small\u00a0<a href=\"https:\/\/www.pamperedchef.com\/shop\/Stoneware\/Large+Bar+Pan\/1445\">Pampered Chef unglazed ceramic pan<\/a>, roasted at about 375\u00ba for about 20 minutes, or until the potatoes had softened and begun to color, arranged on the plates, sprinkled with homemade\u00a0breadcrumbs (browned a little earlier in a little olive oil with a pinch of salt), a small amount of\u00a0cut lengths of chives from Phillips Farm\u00a0arranged on top<\/li>\n<li>rainbow chard from Eckerton Hill Farm, wilted in a little olive oil in which some small garlic cloves from Trader Joe&#8217;s\u00a0had been heated,\u00a0finished with a squeeze of juice from the same local lemon used on the steak, some\u00a0crushed\u00a0dried dried Itria-Sirissi chili, peperoncino di Sardegna intero, from Buon Italia<\/li>\n<li>the wine was a California (vineyards from throughout the state) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/matt-iaconis-california-red-wine-2015.htm\">Matt Iaconis California Red Wine 2015<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li>the music was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=15734\">Heinrich Ignaz Franz Biber, his &#8216;Harmonia artificioso-ariosa, partitas No. 1-7&#8217;, performed by Jeanne Lamon conducting Tafelmusik<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Steak and potatoes.
