{"id":11987,"date":"2017-03-10T01:33:56","date_gmt":"2017-03-10T01:33:56","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11987"},"modified":"2017-03-10T01:33:56","modified_gmt":"2017-03-10T01:33:56","slug":"flounder-tomato-butter-radish-greens-potato-spring-garlic","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11987","title":{"rendered":"flounder, tomato butter; radish greens; potato, spring garlic"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11988\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/flounder_tomato_potato_radish_greens.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>Some of our plates are looking a little brighter these days, like spring, if not summer.<\/p>\n<p>It helps that I can find great tomatoes, almost local (<a href=\"https:\/\/www.backyardfarms.com\/our-tomatoes\/cocktail-tomatoes\">from Maine, near Skowhegan, and pretty &#8216;green&#8217;<\/a>), all winter long.<\/p>\n<p>I chose this &#8216;tomato butter&#8217; treatment for the fish last night because it can be prepared pretty\u00a0quickly, and because, not needing a breading, it doesn&#8217;t involve several extra bowls and processes; also, it ends a delicious recipe.<\/p>\n<p>There were\u00a0other vegetables as well.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11993\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/banana_fingerlings.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11994\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/03\/breakfast_radish.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>two 8-ounce flounder fillets from American\u00a0Seafood Company, lightly\u00a0seasoned, cooked with the flesh side down for about 2 minutes\u00a0in olive oil and butter inside a heavy enameled cast iron pan over medium-high heat, turning once and cooking for another minute or so, placed on the plates, a couple of spoonfuls of \u2018tomato butter\u2019 [see below]\u00a0arranged\u00a0down the center of each fillet, finished with a sprinkling of halved lengths of chives from Phillips Farm<\/li>\n<li>tomato butter, begun\u00a0by cooking one finely-chopped small shallot\u00a0from Norwich Meadows Farm\u00a0inside a small pan with 2 or 3 tablespoons\u00a0of melted butter until the shallot was slightly soft and fragrant, letting the flavored butter cool slightly before being poured over 4 ounces of Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods, cut into eighths, adding 2\u00a0tablespoons of a mix of almost each of the fresh herbs on hand, chopped (red thyme from Phillips Farm, mint,\u00a0sage, and Italian parsley from Eataly), the mix seasoned with salt\u00a0(I usually add a few drops of good Spanish Rioja wine vinegar, but did not do so this time)<\/li>\n<li>a handful of \u2018French Breakfast\u2019 radish greens\u00a0from\u00a0Eckerton Hill Farm,\u00a0wilted in\u00a0olive oil in which\u00a02 small garlic cloves (very much\u00a0<em>not<\/em> local: from Argentina, via\u00a0Trader Joe&#8217;s, but it <em>is<\/em> March, and I hadn&#8217;t put up any preserves\u00a0last year) had been allowed to sweat for a bit, the greens seasoned with salt, pepper and a bit more olive oil<\/li>\n<li>four\u00a0banana fingerlings from Norwich Meadows Farm, scrubbed, left unpeeled, boiled in well-salted water, drained and dried in the warm pot, rolled in butter, salt, pepper, and one chopped spring garlic from Norwich Meadows Farm, scattered with some micro purple radish from Two Guys from Woodbridge<\/li>\n<li>the wine was a California (Lodi) white, <a href=\"https:\/\/us.nakedwines.com\/wines\/david-akiyoshi-reserve-chardonnay-2015.htm\">David Akiyoshi Reserve Chardonnay 2015<\/a><\/li>\n<li>the music included brilliant\u00a0works\u00a0by\u00a02 women, <a href=\"http:\/\/kristinnorderval.org\/discography\/aural-histories\/\">Kristin Norderval&#8217;s album, &#8216;Aural Histories&#8217;<\/a>, and <a href=\"https:\/\/www.kairos-music.com\/cds\/0012542kai\">Olga Neuwirth&#8217;s &#8216;Lost Highway&#8217;<\/a>, and with that report for March 8, we will note\u00a0that <em>every<\/em> day is Women&#8217;s Day!<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Some of our plates are looking a little brighter these days, like spring, if not summer.
