{"id":11609,"date":"2017-02-13T01:34:59","date_gmt":"2017-02-13T01:34:59","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11609"},"modified":"2017-02-13T01:34:59","modified_gmt":"2017-02-13T01:34:59","slug":"breaded-mintchilileek-marinated-swordfish-kalette-chips","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11609","title":{"rendered":"breaded mint\/chili\/leek-marinated swordfish; kalette chips"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11612\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/02\/swordfish_kale_sprouts.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>This swordfish dish has become very familiar on this site, except that\u00a0last night the fresh herb was mint rather than\u00a0the usual oregano, and the micro &#8216;greens&#8217; which finished it were chard, which may never have\u00a0made an appearance here.<\/p>\n<p>The vegetable was almost totally new to our table: <a href=\"http:\/\/food.hoggardwagner.org\/2016\/04\/05\/crab-cakes-on-a-spicy-tomato-salsa-bicolored-kalettes\/\">Ten months ago<\/a> I had served\u00a0<a href=\"http:\/\/complete-review.com\">Kale sprouts<\/a> (the proprietary name is &#8216;Kalettes&#8217;\u00a9), a hybrid of\u00a0kale and Brussels sprouts which grows on stalks like Brussels sprouts. Last April\u00a0I had treated\u00a0them as I would almost any greens, wilted with garlic in olive oil. This time I popped them in the oven, and, voila! puffs of kale chips!<\/p>\n<p>When they came out of the oven they looked like Brussels sprouts that had exploded, like popcorn. They tasted like their botanical heritage: a mix of Brussels sprouts and kale. The texture was that of kale chips, which is to say, sensational! We ate them with our fingers\u00a0(they were impossibly delicate). \u00a0Addictively crunchy, but,\u00a0<em>Unlike<\/em> kale chips,\u00a0each sprout finished with\u00a0a little chewy bit in the center.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11614\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/02\/kale_sprouts.jpg\" alt=\"\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>one swordfish\u00a0steak from the\u00a0<a href=\"http:\/\/nonabrooklyn.com\/greenmarket-pick-bay-scallops-from-seatuck-fish-company\/#.VWo2EGRViko\">Seatuck Fish\u00a0Company<\/a> stall in the Union Square Greenmarket, purchased direct from the owner, fisherman Rob Williams, cut into 2 pieces, marinated for about half an hour\u00a0in a mixture of olive oil,\u00a0chopped fresh mint from Eataly, a pinch or 2 of golden home-dried habanada pepper (the fresh peppers acquired fresh last season from Norwich meadows Farm) a tiny bit of crushed\u00a0dried Sicilian pepperoncino from Buon Italia,\u00a0and a small amount of a thinly-sliced baby leek from Lucky Dog Organic Farm, drained well\u00a0and covered with a coating of dried homemade bread crumbs, pan-grilled above a fairly high flame for about 3-4 minutes on each side, removed, seasoned with salt and pepper, removed to the plates, scattered with a little of the freshly-cut green part of the\u00a0leek used in the marinade, sprinkled with a little local lemon juice from Fantastic Gardens of Long Island, scattered with some micro chard\u00a0from Two Guys from Woodbridge, and\u00a0drizzled with olive oil<\/li>\n<li>a couple handfuls of\u00a0<a href=\"http:\/\/complete-review.com\">kale sprouts<\/a>,\u00a0a hybrid of\u00a0kale and brussels sprouts, from Northshire Farm, stems trimmed, the sprouts washed, dried as well as was convenient, tossed in a bowl with a bit of\u00a0olive oil (little more than a tablespoon), some Maldon salt, and a bit of freshly-ground Tellicherry pepper, spread onto a <a href=\"https:\/\/www.pamperedchef.com\/shop\/Stoneware\/Large+Bar+Pan\/1446\">large Pampered Chef unglazed ceramic pan<\/a>, baked for 10 or 15 \u00a0minutes at 450\u00ba to 475\u00ba, or until the aromas arising suggested they were done<\/li>\n<li>the wine was a Spanish (Rueda) white, <a href=\"http:\/\/www.bodegasnaia.com\/naia-2010-en\">Naia D.O.
