Thinking about it retroactively however, I could say there was the relationship between the date (the eve of an\u00a0installation of a proto-fascist regime in Washington) and the\u00a0historical memory which recalls the food culture\u00a0of the nation which was the last one to pass\u00a0over that line.<\/p>\n<p>It was also real\u00a0comfort food, a meal\u00a0would be very familiar to most\u00a0Germans: nothing fancy. I think it gave us both a little comfort, if only for the evening.<\/p>\n<ul>\n<li>a section of <a href=\"http:\/\/www.seriouseats.com\/2011\/01\/snapshots-from-germany-sulze-head-cheese.html\">S\u00fclze<\/a>\u00a0[we ended up eating twice the amount shown, it was so good] from <a href=\"http:\/\/nymag.com\/listings\/stores\/schaller-and-weber\/\">Schaller &amp; Weber<\/a>, served with a little sliced red onion from Norwich Meadows Farm; 4 Backyard Farms Maine \u2018cocktail tomatoes\u2019 from Whole Foods; and some\u00a0micro arugula from Windfall Farms, drizzled with good olive oil<\/li>\n<li>slices of a \u2018corn rye\u2019 boule (&#8216;unbromated wheat flour&#8217;, rye flour, caraway, rolled in cornmeal, and all grains local)\u00a0from <a href=\"https:\/\/hotbreadkitchen.org\/\">Hot Bread Kitchen<\/a>, along with\u00a0some wonderful, rich\u00a0<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u00a0(with12 grams of total fat per tablespoon [virtually all other brands of butter available in this country have only 11, and\u00a0it does make a major difference])<\/li>\n<\/ul>\n<p>The second course was built around leftovers, specifically a mix of leftover cooked vegetables which might normally have been tossed after they\u00a0had served their first grand\u00a0purpose in flavoring the meal for which they\u00a0had first been assembled. I hadn&#8217;t tossed them, knowing they could\u00a0flourish again.<\/p>\n<ul>\n<li>a combination of chicken and beef broth\u00a0reconstituted from jars of\u00a0<a href=\"http:\/\/www.betterthanbouillon.com\/\">Better Than Bullion<\/a>, a very small amount of the juices which remained from <a href=\"http:\/\/food.hoggardwagner.org\/2017\/01\/19\/roasted-squid-oregano-chili-habanada-lemon-pak-choy\/\">the squid we had enjoyed\u00a0on Wednesday<\/a>, and the finely-chopped cooked vegetables I had retrieved from the braising liquid that had remained from <a href=\"http:\/\/food.hoggardwagner.org\/2017\/01\/18\/paprika-rubbed-braised-goat-sweetsour-parsnips-mizuna\/\">Sunday&#8217;s\u00a0goat shoulder<\/a>, all heated together then served in low bowls, garnished with fresh chopped parsley from Eataly<\/li>\n<li>there was more of the bread, to ensure that all of the soup could be\u00a0appreciated<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11276\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/vegetable_soup.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>the wine throughout was a French (Alsatian) white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/domaine-joseph-cattin-pinot-blanc-alsace-2015#.WIGXoIE8KaM\">Domaine Joseph Cattin Pinot Blanc Alsace 2015<\/a>, from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<li>the music throughout was\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=38865\">Alfred Schnittke&#8217;s &#8216;Concerto Grosso No. 2&#8217;, with Torleif Thed\u00e9en (Cello) and Oleh Krysa (Violin), Lev Markiz conducting the\u00a0Malm\u00f6 Symphony Orchestra<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was a very German meal, for no particular reason.
