{"id":11244,"date":"2017-01-19T01:21:26","date_gmt":"2017-01-19T01:21:26","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11244"},"modified":"2017-01-19T01:21:26","modified_gmt":"2017-01-19T01:21:26","slug":"vegetable-maultauschen-chevon-broth-micro-purple-radish","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11244","title":{"rendered":"vegetable Maultauschen, chevon broth, micro purple radish"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11245\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/Mautauschen.jpg\" alt=\"\" width=\"600\" height=\"450\" \/><\/p>\n<p>I had been keeping a package of German filled vegetable pasta, &#8216;<a href=\"https:\/\/en.wikipedia.org\/wiki\/Maultasche\"><em>Maultauschen<\/em><\/a>&#8216;, in the freezer for just this opportunity.<\/p>\n<p>I had purchased it from <a href=\"http:\/\/www.schallerweber.com\/\">Schaller &amp; Weber<\/a>, the last German food store in old Yorkville, weeks before; it was on the day after the opening of the Second Avenue Subway (<a href=\"https:\/\/www.dnainfo.com\/new-york\/20120319\/upper-east-side\/schaller-weber-serving-best-of-wurst-for-75-years-on-second-ave\">conveniently, at least now that its\u00a0construction is complete<\/a>, there&#8217;s an entrance just outside the store). Last night, looking around for ideas for a meal of pasta, for a break between meat and fish entr\u00e9es, I remembered that I had both the <em>Maultauschen<\/em> and the perfect\u00a0<em>Br\u00fche\u00a0<\/em>to serve it in: some\u00a0rich broth that remained from <a href=\"http:\/\/food.hoggardwagner.org\/2017\/01\/18\/paprika-rubbed-braised-goat-sweetsour-parsnips-mizuna\/\">the braised chevon (goat) shoulder which we had enjoyed\u00a0on Sunday<\/a>.<\/p>\n<p>It was a match made in\u00a0Manhattan, and in fact it might have been possible only in Manhattan. It seems the filled pasta can be found here, but Goat is not a big item in <em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Swabia_(Bavaria)\">Schwaben<\/a>,\u00a0<\/em>or in Berlin for that matter.<\/p>\n<p>They were absolutely delicious.<\/p>\n<ul>\n<li>one\u00a010.6-ounce (300 grams) package of frozen <a href=\"http:\/\/mellesbest.com\/\">Melle&#8217;s Best<\/a> &#8216;Mini Maultauschen&#8217;\u00a0&#8211; <em>vegetarisch,\u00a0<\/em>from Schaller &amp; Weber, boiled in a large amount of water for a very few minutes, drained, slipped into a high-sided tin-line heavy copper pan in which some clear rich goat broth, or\u00a0<em>Br\u00fche<\/em>, had already been warmed, the\u00a0<em>Teigwaren <\/em>first allowed to get a little friendly with the liquid, both then removed\u00a0to wide bowls and\u00a0sprinkled with a little freshly-ground Tellicherery pepper and a little micro purple radish from Two Guys from Windfall Farms scattered over the top<\/li>\n<li>the wine was a German (Mosel) white,\u00a0<a href=\"http:\/\/www.urbans-hof.de\/cms\/start-1001.html\">Urban Riesling 2011\u00a0from\u00a0das Weingut St. Urbans-Hof<\/a>, from Philippe Wine and Spirits on West 23rd Street<\/li>\n<li>the music was the album, &#8216;<a href=\"http:\/\/www.warnerclassics.com\/shop\/3253479,0190295969691\/christina-pluhar-orfeo-chaman\">Orfeo Chaman<\/a>&#8216;, an opera composed and arranged by Christina Pluhar, &#8220;a retelling of the Orpheus myth drawing on Baroque music and folksongs from South America to Sicily&#8221;, with Nahuel Pennisi in the title role<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11252\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/Orfeo.jpg\" alt=\"\" width=\"450\" height=\"675\" \/><\/p>\n<p>[still of an\u00a0&#8216;Orfeo Chaman&#8217; scene, Pennisi on the left, from <a href=\"http:\/\/www.warnerclassics.com\/christina-pluhar\/photos\">Warner Classics<\/a>]<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I had been keeping a package of German filled vegetable pasta, &#8216;Maultauschen&#8216;, in the freezer for just this opportunity.
