I had purchased it to share with friends on New Year&#8217;s Day, but over the\u00a0next 5 days\u00a0it eventually became\u00a0the centerpiece of 8 delicious main course dishes, making the cost per serving only $5.<\/p>\n<p>And they definitely were delicious, this last meal, where only a few ounces of our smoky leftovers were able to\u00a0dominate a luscious combination of some pretty assertive vegetables, no less than the ones which had preceded it.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11104\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/red_cabbage2.jpg\" alt=\"red_cabbage2\" width=\"450\" height=\"600\" \/><\/p>\n<ul>\n<li>\n<p class=\"p1\">two tablespoons of\u00a0<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u00a0melted in a small, heavy, tin-lined copper pan over medium-high heat, without stirring,\u00a0until the butter had become\u00a0golden brown, a generous amount of sage leaves from\u00a0Eataly added at that time, and the pan removed from the heat and put aside while 3 outer leaves of a red cabbage from\u00a0Hoeffner Farms, sliced very thinly,\u00a0saut\u00e9ed in another, larger, copper skillet (eventually adding water) until lightly cooked (retaining a slight crunch), and, near the end of that time, one medium shallot from Norwich Meadows Farm,\u00a0thinly-sliced, added and heated until soft, followed by a few ounces of leftover smoked pork (originally a part of the preparation of <a href=\"http:\/\/food.hoggardwagner.org\/2017\/01\/03\/haddock-cress-kassler-braten-horseradish-potato-tardivo\/\">this meal<\/a>) which had been sliced into thick matchstick lengths, then the contents of the skillet added to 8 ounces of a locally-sourced and locally-produced, seasonal and and artisanal pasta, <a href=\"https:\/\/www.sfoglini.com\/\">Sfoglini<\/a> &#8216;Jerusalem Artichoke Fusilli&#8217;\u00a0(incorporating <a href=\"https:\/\/en.wikipedia.org\/wiki\/Jerusalem_artichoke\">sunchokes <\/a>grown by Norwich Meadows Farm) which had been cooked\u00a0<em>al dente\u00a0<\/em>during the preparation of the sauce, drained, and returned to the cooking pot, everything stirred, along with some reserved pasta cooking water, at which time the sage butter was added and the mix seasoned with salt and pepper to taste<\/p>\n<\/li>\n<li>the wine was a Hungarian (Tokaji) white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/royal-tokaji-wine-co-the-oddity-dry-furmint-2013#.WG8doIE8KaM\">Royal Tokaji Wine Co.
