{"id":11073,"date":"2017-01-04T06:11:52","date_gmt":"2017-01-04T06:11:52","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11073"},"modified":"2017-01-04T06:11:52","modified_gmt":"2017-01-04T06:11:52","slug":"leftovers-and-others-kassler-horseradish-potatoes-rotkohl","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11073","title":{"rendered":"leftovers and others: Kassler; horseradish potatoes; rotkohl"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11075\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/Kassler_Braten_Kartoffel_Rotkohl.jpg\" alt=\"kassler_braten_kartoffel_rotkohl\" width=\"600\" height=\"450\" \/><\/p>\n<p>Leftovers, but a very special kind of leftovers.<\/p>\n<p>Tonight we enjoyed a re-run of <a href=\"http:\/\/food.hoggardwagner.org\/2017\/01\/03\/haddock-cress-kassler-braten-horseradish-potato-tardivo\/\">our\u00a0New Year&#8217;s Day feast<\/a>, absent the radicchio but present some good red cabbage, simply presented.<\/p>\n<ul>\n<li>about 16 ounces of the 24 ounces of smoked pork loin which remained from Sunday, reheated in the oven after being drizzled with the small amount of sauce that had\u00a0also not been consumed that day, along with the modest amount of the surviving horseradish potato gratin, both served with a small amount of pungent horseradish jelly from <a href=\"http:\/\/www.berkshireberries.com\/\">Berkshire Berries<\/a>\u00a0and a handful\/scoop\u00a0of 2 finely-sliced <em>really<\/em> tiny red cabbages from Norwich Meadows Farm that had been dressed with a little good olive oil, salt, pepper, and a drizzle of real apple cider vinegar from Race Farm and allowed to sit for 45 minutes<\/li>\n<li>the wine was a German (Baden) red,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/hermann-dorflinger\/wines\/spatburgunder-mullheimer-reggenhag-spatlese-trocken-2013\">Hermann Dorflinger Sp\u00e4tburgunder M\u00fcllheimer Reggenhag Sp\u00e4tlese trocken 2013<\/a>\u00a0which we had brought through customs when returning from our last German trip<\/li>\n<li>the music was <a href=\"http:\/\/bis.se\/composer\/schnittke-alfred\/schnittke-symphony-no4\">Alfred Schnittke, Symphony No. 4, the Stockholm Sinfonietta conducted by Stefan Parkman, the\u00a0Uppsala Akademiska Kammarkor directed by Okko Kamu<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Leftovers, but a very special kind of leftovers.
