{"id":11018,"date":"2017-01-01T17:57:53","date_gmt":"2017-01-01T17:57:53","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=11018"},"modified":"2017-01-01T17:57:53","modified_gmt":"2017-01-01T17:57:53","slug":"prosciutto-lobster-mezzalune-butter-tarragon-pink-pepper","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=11018","title":{"rendered":"prosciutto; lobster mezzalune, butter, tarragon, pink pepper"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11024\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/prosciutto_oil_bread-1.jpg\" alt=\"prosciutto_oil_bread\" width=\"600\" height=\"450\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-11022\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2017\/01\/lobster_mezzalune.jpg\" alt=\"lobster_mezzalune\" width=\"600\" height=\"450\" \/><\/p>\n<p>Red.<\/p>\n<p>Red pork, red lobster, red\/pink\u00a0&#8216;peppercorns&#8217;: \u00a0It wasn&#8217;t a plan, but after the fact the red tones\u00a0in this simple meal seemed right [Left]\u00a0for the turn of a year in anxious times, even if the pleasures of the celebratory meal itself were nothing of the\u00a0sort.<\/p>\n<ul>\n<li>red pepper taralli<\/li>\n<\/ul>\n<ul>\n<li>four ounces of thinly-sliced prosciutto Friulano Levoni from Eataly, served on a plate with a little Campania olive oil (Lamparelli O.R.O.\u00a0from Buon Italia<\/li>\n<li>pieces torn\u00a0off an\u00a0Eric Kayser &#8216;baguette monge&#8217;, from the bakery\/store near the Flatiron Building (still very warm when purchased at 5 that afternoon)<\/li>\n<\/ul>\n<ul>\n<li>lobster-filled mezzaluna (about 13 ounces) from the <a href=\"http:\/\/www.rananyc.com\/\">Rana store<\/a> inside Chelsea Market, with a sauce of only a few tablespoons of\u00a0rich\u00a0<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter,<\/a>\u00a0melted, a few sprigs of chopped tarragon from Whole foods and some crushed <a href=\"https:\/\/en.wikipedia.org\/wiki\/Pink_peppercorn\">pink peppercorns<\/a>, the last a delicacy I had discovered in the original Dean &amp; Deluca store on Prince Street in the early 80s<\/li>\n<li>more bread, to finish the sauce<\/li>\n<\/ul>\n<ul>\n<li>a toast, at midnight, with a split of\u00a0Perrier-Jou\u00ebt Grand Brut Champagne<\/li>\n<\/ul>\n<ul>\n<li>the wine throughout (until the midnight toast) was an Italian (Campania) white,\u00a0<a href=\"https:\/\/www.vivino.com\/wineries\/feudi-di-san-gregorio\/wines\/falanghina-2014\"><span class=\"wine-info__winery\">Feudi di San Gregorio <\/span><span class=\"bold text-color-alt-gray wine-info__wine\">Falanghina 2014<\/span><\/a><\/li>\n<li>\n<div>\u00a0the music throughout was WKCR streaming, the very last hours of its 9-day \u2018<a href=\"https:\/\/www.cc-seas.columbia.edu\/wkcr\/story\/bach-festival-2016\">Bach Festival 2016<\/a>, then topped off after midnight with Bach&#8217;s\u00a0delightful secular cantata-almost-opera, \u00a0<a href=\"https:\/\/en.wikipedia.org\/wiki\/Geschwinde,_ihr_wirbelnden_Winde,_BWV_201\">&#8216;Geschwinde, ihr wirbelnden Winde&#8217;<\/a> (Swift, You Swirling Winds), the dramatization of a\u00a0dispute between Phoebus and Pan about the relative merits of popular and &#8216;learned&#8217; music<\/div>\n<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Red.
