We&#8217;d had our fish the night before (well, it was a Friday in Christendom), so I opted for a vegetarian pasta dish, but I introduced it with a few ounces of meat.<\/p>\n<ul>\n<li><a href=\"http:\/\/laquercia.us\/cuts_ham_speck_americano\">La Quercia Speck Americano<\/a>, described as \u2018applewood-smoked prosciuto\u2019 (3 ounces), from Whole Foods, drizzled with\u00a0olive oil,\u00a0<a href=\"http:\/\/www.frantoiogargiulo.com\/it\/shop\/olio-oliva-dop-sorrento\/olio-di-oliva-dop_penisola_sorrentina-_-2014-01-28-2014-01-28-detail.html\">Campania D.O.P. Penisola Sorrentina &#8216;Syrenum&#8217;<\/a>, from Buon Italia, maldon salt, freshly-ground black pepper, and a squeeze of sweet local lemon from Fantastic Gardens of Long Island<\/li>\n<li>served with a wonderful\u00a0&#8216;baguette sarasin&#8217; (buckwheat flour bread) from Eric Kayser<\/li>\n<\/ul>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10925\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/12\/pasta_with_mushrooms.jpg\" alt=\"pasta_with_mushrooms\" width=\"600\" height=\"450\" \/><\/p>\n<ul>\n<li>eight or so ounces of a <em>local<\/em> pasta, <a href=\"https:\/\/www.sfoglini.com\/products\/saffron-malloreddus\">Sfoflini Malloreddus<\/a>, cooked <em>al dente,\u00a0<\/em>drained and mixed with a sauce which had been prepared by heating 4 tablespoons of\u00a0<a href=\"http:\/\/kerrygoldusa.com\/products?category=2\">Kerrygold Pure Irish Butter<\/a>\u00a0until it had stopped sizzling, after which 10 small fresh sage leaves, chopped, were added along with 8 ounces of John D. Madura Farm sliced shiitake mushrooms, the mushrooms saut\u00e9ed until soft and golden brown and seasoned with salt and pepper, the sauced pasta\u00a0mixed with almost a quarter of a cup of shredded Parmigiano Reggiano Vacche Rosse\u00a0from Buon Italia, served in shallow bowls with additional cheese on the side<\/li>\n<li>the wine was an Oregon (Umpqua Valley) red,\u00a0<a href=\"https:\/\/us.nakedwines.com\/wines\/scott-kelley-pinot-noir-oregon-2015.htm?cid=USA\">Scott Kelley Pinot Noir Oregon 2015<\/a>, from <a href=\"https:\/\/us.nakedwines.com\/\">Naked Wines<\/a><\/li>\n<li>the music was WKCR streaming, specifically, its 9-day &#8216;<a href=\"https:\/\/www.cc-seas.columbia.edu\/wkcr\/story\/bach-festival-2016\">Bach Festival 2016<\/a>&#8216;,\u00a0which included\u00a0<a href=\"http:\/\/www.arkivmusic.com\/classical\/album.jsp?album_id=1064721\">Simone Dinnerstein performing his\u00a0&#8216;Inventions &amp; Sinfonias&#8217;, BWV 772-801<\/a><\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>It was the eve of Christmas, or just plain December 24th.
