It actually represents 2 small saut\u00e9ed skate wings touching each other on the plate, embracing some\u00a0gently wilted mildly-peppery <a href=\"https:\/\/en.wikipedia.org\/wiki\/Mizuna\">mizuna<\/a> (aka shui cai, kyona, Japanese mustard, potherb mustard, Japanese greens, California peppergrass, or spider mustard).<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10627\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/11\/mustards_Gorzynski_Farm.jpg\" alt=\"mustards_gorzynski_farm\" width=\"600\" height=\"450\" \/><\/p>\n<p>L to R, the mizuna, plus mustard spinach and chinese mustard at the market<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10628\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/11\/Bulls_Blood_Beet.jpg\" alt=\"bulls_blood_beet\" width=\"600\" height=\"450\" \/><\/p>\n<p>&#8216;Bull&#8217;s Blood&#8217; micro beet is the brilliantly-colored micro vegetable\u00a0on the skate<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10649\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/11\/micro_red_chard.jpg\" alt=\"micro_red_chard\" width=\"600\" height=\"450\" \/><\/p>\n<p>(picked beet over these micro chard, mostly because the latter\u00a0was so Xmas-y)<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>four 4-ounce skate wings from\u00a0P.E. &amp; D.D. Seafood,\u00a0coated all over with a coarse polenta seasoned with salt and pepper, saut\u00e9ed in olive oil (and a bit of butter) for 3 minutes or so on each side inside a heavy enameled cast iron oven pan\u00a0(the only difficult part of this recipe is turning them over without breaking them up), removed, about 1 1\/2 tablespoons of butter, one\u00a0small Japanese scallion from Norwich Meadows Farm, one tiny &#8216;red wing\u2019 onion from Keith\u2019s Farm,\u00a0and 2 small cloves of garlic from from S. &amp; S.O. Produce Farms, all sliced or chopped, introduced into it\u00a0and stirred over a now-lowered flame, followed by the addition of a little more butter, the juice from half of a very sweet organic lemon from Whole Food Market some chopped marjoram from Stokes Farm and a bit of chopped parsley from Norwich Meadows Farm,\u00a0stirring for a bit to blend everything, finishing on the plates with\u00a0a\u00a0scattering of\u00a0&#8216;Bull&#8217;s Blood&#8217; micro beet from Windfall Farm<\/li>\n<li>one bunch of purple mizuna from <a href=\"http:\/\/www.riverreporter.com\/issues\/01-08-30\/gorzynski.htm\">Gorzynski Ornery Farm<\/a>, very slightly wilted\u00a0in a pan in which a\u00a0halved garlic clove S. &amp; S.O. Produce Farms had first been allowed to barely begin to brown in a little olive oil, seasoned with salt and pepper and drizzled with a bit more oil<\/li>\n<li>the wine was an Argentinian (<a href=\"https:\/\/en.wikipedia.org\/wiki\/Mendoza_wine\">Mendoza<\/a>) white,\u00a0<a href=\"http:\/\/www.chelseawinevault.com\/shop-by\/this-month-s-top-10\/santa-julia-viognier-plus-mendoza-2015#.WDpT5LU8KaN\">Santa Julia Viognier Plus Mendoza 2015<\/a>\u00a0from <a href=\"http:\/\/www.chelseawinevault.com\/\">Chelsea Wine Vault<\/a><\/li>\n<li>the music was\u00a0<a href=\"https:\/\/www.amazon.com\/Charpentier-David-Jonathas-Marc-Antoine\/dp\/B000005Z3O\">Marc-Antoine Charpentier&#8217;s 1688 opera, &#8216;David &amp; Jonathas&#8217;<\/a>, a\u00a0<em>trag\u00e9die en musique<\/em>\u00a0which does not end well for anyone, William Christie\u00a0conducting Les Arts Florissants [note; in its time, the opera was <a href=\"https:\/\/en.wikipedia.org\/wiki\/David_et_Jonathas\">very big in Jesuit land<\/a>]<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>The picture may be misleading.
