{"id":10216,"date":"2016-10-28T00:12:23","date_gmt":"2016-10-28T00:12:23","guid":{"rendered":"http:\/\/food.hoggardwagner.org\/?p=10216"},"modified":"2016-10-28T00:12:23","modified_gmt":"2016-10-28T00:12:23","slug":"crab-cakes-salsa-arugula-chili-mint-radish-radicchio","status":"publish","type":"post","link":"https:\/\/food.hoggardwagner.org\/?p=10216","title":{"rendered":"crab cakes, salsa, arugula, chili, mint, radish; radicchio"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10217\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/10\/crab_cake_salsa_arugula_radicchio.jpg\" alt=\"crab_cake_salsa_arugula_radicchio\" width=\"600\" height=\"450\" \/><\/p>\n<p>Yeah, gorgeous.<\/p>\n<p>And everything was minimal before I started.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-10223\" src=\"http:\/\/food.hoggardwagner.org\/wp-content\/uploads\/2016\/10\/radicchio.jpg\" alt=\"radicchio\" width=\"500\" height=\"500\" \/><\/p>\n<ul>\n<li>two crab cakes from PE &amp; DD Seafood (the ingredients are crab, egg, flour, red &amp; green peppers, garlic, salt, pepper, breadcrumbs, mayonnaise, milk, celery, and parsley), seared\/heated in a\u00a0cast iron\u00a0pan, 2\u00a0to 3\u00a0minutes for\u00a0each side,\u00a0served on 2 plates on top of a salsa composed of roughly-chopped heirloom tomatoes from Stokes Farm, a little\u00a0chopped red scallion from\u00a0Norwich Meadows Farm, salt, freshly-ground black pepper, a bit of homemade French Basque\u00a0<em><a href=\"https:\/\/en.wikipedia.org\/wiki\/Espelette_pepper\">piment d\u2019Espellate<\/a><\/em>\u00a0purchased in a small town north of Baie-Comeau, Quebec last year from the producer\u2019s daughter, one\u00a0heatless\u00a0orange Habanada pepper from Norwich Meadows Farm, a very small amount of\u00a0dried Itria-Sirissi chili, peperoncino di Sardegna intero from Buon Italia, chopped julip mint from Stokes Farm, topped with a scattering of purple micro radish from Two Guys from Woodbridge; the salsa was itself placed on a &#8216;nest&#8217; of wild arugula from Paffenroth Farms, which had been seasoned with a little oil, salt, pepper, and drizzled with lemon juice<\/li>\n<li>one not-very-large radicchio from Campo Rosso Farm,\u00a0quartered, placed in a small unglazed ceramic oven pan (Pampered Chef, long ago well-seasoned), drizzled with olive oil and seasoned with salt and pepper, roasted at 400\u00ba for about 12 minutes, turning once, finished with a drizzle of balsamic vinegar, and, scattered with shavings of Parmigiano Reggiano Vacche Rosse\u00a0from Buon Italia<\/li>\n<li>unfortunately this time we&#8217;ve lost track of the information on the wine and the music (I&#8217;m embarrassed)<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Yeah, gorgeous.
